Mandag har blitt vegetardagen hjemme hos oss, og i dag hadde vi en deilig ovnsrett med aubergine i hovedrollen. Retten roper middelhavet lang vei med aubergine, tomater og mozzarellaost. Og ganske riktig – melanzane alla parmigiana, er en av de virkelig klassiske italienske rettene.

Som så mange av de italienske klassikerne er dette en ukomplisert og temmelig rustikk rett langt fra avanserte teknikker og forfinede sauser. Her er det bare silkemyke skiver med aubergine sammen med en frisk tomatsaus og smeltet ost, masse smeltet ost. Og som en bekjent så elegant formulerte det; «Hvem kan vel si nei til smeltet ost». Det kan i hvert fall ikke jeg.

Selv om jeg sier at dette er en ukomplisert rett, er den ikke laget i en håndvending. Så dette er ikke noe å satse på når det er 20 minutter til fotballtreningen begynner. Men har du litt tid til overs en ettermiddag, er dette virkelig en deilig rett å lage og sette på bordet.

Ingredienser

  • 3 auberginer
  • 2 ss salt
  • 1 stor løk
  • 2 fedd hvitløk
  • 1 ss olivenolje + olje til steking av auberginer
  • 2 bokser knuste tomater
  • salt og nykvernet pepper
  • 2 ss oregano
  • 2 mozzarella oster
  • 50 gr parmesan

Fremgangsmåte

  • Skjær auberginene i 0,5 cm tykke skiver.
  • Dryss sivene med salt og legg dem i et dørslag og la dem dryppe av seg mens du lager tomatsausen.
  • Finhakk løk og hvitløk og fres de i oljen til det har blitt blankt og mykt.
  • Tilsett de knuste tomatene. Smak til med litt salt og la det småkoke 5-10 minutter -  alt etter hvor god tid du har.
  • Skyll saltet vekk fra aubergineskivene, og klapp dem tørre i et kjøkkenhåndkle.
  • Stek aubergineskivene i litt olje i en stekepanne.
  • Ha litt olje i bunnen av et ildfast fat og legg et lag med aubergineskiver tett i tett. Hell over 1/4av tomatsausen. Skjær mozzarellaene i tynne skiver og legg 1/4 oppå tomatsausen. Dryss over 1/4 av parmesanen.
  • Fortsett på samme måte til alle aubergineskivene er brukt opp. Avslutt med mozzarella og parmesan.
  • Sett inn i en varmluf på 200 grader og stek i ca. 25-30 minutter. Kjenn med en gaffel at aubergineskivene er møre og at osten på toppen bobler og har blitt gyllen.

Pynt gjerne med mer friske urter og server med en grønn salat og gjerne brød ved siden av. Vel bekomme.
