Se på den fargen, da. Det er nesten helt magisk hvordan rødkålen forvandles til denne sjokkrosa herligheten. Det er eddiken som gjør at syltet rødkål får den flotte fargen.

Jeg har krydret denne syltede rødkålen med fennikelfrø og pepper. Pepper gir en svar varme og fennikelfrøene sørger for en anelse anissmak. Jeg har brukt mindre sukker enn i en klassisk 1-2-3 lake, men synes fremdeles at det er en fin balanse mellom søtt og syre. Resultatet er en krydret og frisk grønnsaksrett som passer fint til mange slags retter. Jeg serverte den til falafel, men tror den vil passe like godt til stekt kjøtt eller sommerens grillmat. Syltet rødkål vil også passe supert til mange slags tacoretter.

Ingredienser

  • 1/4 rødkål
  • 1 dl 7% eddik
  • 1 dl sukker
  • 3 dl vann
  • 1 ts fennikelfrø
  • 1 ts pepperkorn

Fremgangsmåte

  • Kutt rødkålen i fine strimler. Bruk gjerne mandolin om du har det.
  • Knus fennikelfrøene.
  • Kok opp vann, eddik, sukker og krydder.
  • Hell laken over kålen og la det stå i minst 1 time før servering.

Kålen holder seg fint i mange dager i kjøleskapet.

Tja, det kommer jo litt an på hvor mye rødkål det blir, men kanskje en liter når det er ferdig.
