Akkurat nå er det vanskelig å forestille seg at det skal bli sommer og varmt igjen. Ute ligger snøen i tykt lag og termometeret viser minusgrader med to siffer. Slike forhold gjør det nødvendig å drømme seg til varmere tider og breddegarder. Min beste måte å drømme meg til et annet sted, er å lage og spise maten derfra. I dag går min tanke- og ganeflukt til Provence og jeg har laget pissaladière. Dette er et brød med masse gyllen løk og ansjoser. Denne byr på en fenomenal smaksopplevelse av den søte løken, den salte ansjosen og en spør bunn.

Gjærdeigen kjevles ut til en leiv som er litt tykkere enn en italiensk pizza og så toppes den med løk – masse løk. Løken stekes lenge i en panne sånn at den blir karamellisert og veldig søt. Dette toppes av et ansjosgitter og oliven. Kombinasjonen høres kanskje litt aparte ut, men jeg lover dette er skikkelig snadder.

Pissaladière kommer visstnok fra Nice. Nå for tiden spises den som en forrett, eller som tiltygg sammen med et glass vin. Det er også en fin lunsjrett sammen med en frisk, gjerne grønn salat. Jeg må innrømme at tanken på å sitte med tærne i middelhavet, med ett glass vin i hånden og pissaladière i den andre hånden, er voldsom forlokkende akkurat nå.

Ingredienser

  • 250 gr hvetemel
  • 1 ts salt
  • 1,5 dl vann
  • 20 gr gjær
  • 1 ss olivenolje
  • --
  • 1 kg gul løk
  • 2 fedd hvitløk
  • 2 ss olivenolje
  • 1 ts sukker
  • 1/2 ts salt
  • nykvernet pepper
  • 1 ts herbs de provence
  • frisk timian
  • 1 glass ansjos
  • sorte oliven

Fremgangsmåte

  • Ha mel og salt i en bakebolle.
  • Rør gjæren ut i vannet og tilsett dette sammen med olivenoljen i melet.
  • Elt deigen til den har blitt smidig.
  • Sett deigen et lunt sted til heving til deigen har blitt dobbelt så stor (45-60 min).
  • Mens deigen hever lages fyllet: Skjær løken i tynne skiver og hakk hvitløken.
  • Stek løken og hvitløken sammen med sukkeret i en stekepanne til løken blir myk og har skiftet farge, men den skal ikke bli brun.
  • Tilsett krydder, salt og pepper og legg lokk på stekepannen og la det surre i ca. 30 minutter. Rør av og til. Dersom blandingen er litt fuktig når det gjenstår 10 minutter, ta av lokket.
  • Rull ut deigen til en nokså tynn rektangulær leiv.
  • Fordel løkblandingen over deigen og legg på ansjosfileter i rutemønster som vist på bildet, og legg oliven i "skjøtene".
  • Stek i ovnen på 220 grader i ca. 25-30 minutter.

Server romtemperert eller kald med en frisk salat ved siden av. Et glass vin til er heller ikke så dumt.
