OKTOBER – en mer ydmyk grønnsak enn løken skal man lete lenge etter. Den stikker seg sjelden frem, men er helt nødvendig i veldig mange retter. Den bare er der og danner grunntonen. Så er det andre ingredienser som får lov til å spille førstefiolin. Men nå har jeg samlet mine 5 beste oppskrifter med løk, der den får spiller en større rolle og skinne litt mer enn til vanlig.

Denne paien er virkelig nydelig. Den har flakete paiskall, masser av søt og deilig karamellisert løk og godt med ost. Server den med litt salat og kanskje en baguette ved siden av.

Syltet rødløk

Dette altså, er ett av mine favorittilbehør. Ha det i salaten, på leverposteiskiva, i kebaben eller tacolefsa, til kjøtt eller fisk, ja det er i grunnen bare fantasien som setter grenser for hva du kan bruke den til. Denne løken er sprø og syrlig på en gang. Og det beste er at det er veldig fort gjort å lage, og et glass holder seg en god stund i kjøleskapet.

Pissaladière

Dette er en sydfransk pizzalignende snack, eller noe sånn. Gjærdeig fylt med søt karamellisert løk, salte ansjos og oliven. Ser ganske fancy ut også med rutemønsteret på toppen. Helt perfekt sammen med et glass kald rosévin en varm sommerkveld, men også helt riktig som et tiltygg sammen med et glass med bobler,

Altså, dersom du vil imponere med et flott tilbehør så er jo disse løkene midt i blinken. De krever nesten ikke noen innsats, men gir max uttelling i komposisjon av en vakkert opplagt middagstallerken.

Fransk løksuppe

Jeg innser at det har blitt mye fransk løkinspirasjon denne gangen, men det er jo helt umulig å komme utenom en sånn løkkavalkade uten å ta med fransk løksuppe. Det er jo bare så godt. En deilig kraft som blir enda bedre med løken i og så et realt ostesmørbrød på toppen. Jeg bøyer meg i hatten for den som fant på å toppe denne suppen med ost.

Dette var altså fem av mine beste oppskrifter med løk, men det kunne jo vært mange flere. For løken danner jo ofte basen i en rett. Italienerne begynner ofte en saus med det de kaller soffritto som er nettopp løk sammen med gulrot og stangselleri. Dette freser de sammen til alt er helt mykt og de enkelte grønnsakene ikke lenger er tre forskjelllige ting, men har gått opp i en høyere enhet. Så, spagetti bolognese, eller lasagne for eksempel hadde ikke vært det samme uten.

Dessuten, løken er jo temmelig viktig i norsk tradisjonell matlaging også. Jeg nevner i fleng; seibiff med løk, kjøttkaker, sursøt løksaus og mye mer. Hjemme hos oss, går det knapt en dag uten at jeg bruker løk, tror jeg.

 

Fun fact

Løk inneholder et stoff som heter cystein. Det inneholder en slags svovelsyre, og det er det som får øynene til å renne når du kutter opp løken. Men den stimulerer også blodomløpet, og i gamle dager var det noen som brukte løk i skoene, for å øke blodgjennomstrømmingen slik at føttene holdt seg varmere.
