Eggerøre er nok noe av det enkleste man kan lage på kjøkkenet. I sin enkleste form er det sammenpiskede egg som stekes under omrøring til det stivner. Allikevel kjenner vi vel alle tilfeller av tørr og trist eggerøre. Men denne luksusvarianten er alt annet enn tørr og trist. Denne eggerøren er kremet, saftig og utrolig god på smak. Store mengder smør sørger for det. Hemmeligheten er å bruke lang tid, og altså mye smør.

Jeg pisker sammen eggene og tilsetter litt salt og kremfløte. Så smelter jeg masse smør og steker eggeblandingen på lav varme mens jeg rører litt rundt. Underveis i stekeprosessen tilsetter jeg mer kaldt smør som så tas opp i eggene. Dette gir en flott blank og silkemyk røre som passer ypperlig til sommerens spekemat eller røkelaks. Jeg ser også for meg at denne passer veldig godt sammen med noen dampede grønne asparges.

Selv om 17. mai er tilbakelagt og også de andre fridagene i vår, er det fortsatt masse å feire, og da kan det komme godt med å ha denne deilige eggerøren i repertoaret. Selv om jeg sier at man skal bruke lang tid, er det ikke snakk om mer enn 10-15 minutter. Oppskriften nedenfor er beregnet til 4 personer, men det er lett å skalere oppskriften opp og ned. Steketiden vil nok øke eller kortes litt ned alt etter som hvor stor porsjon som laget.

Ingredienser

  • 8 egg
  • 4 ss kremfløte
  • 1/2 ts salt
  • 150 gr smør
  • evt. gressløk

Fremgangsmåte

  • Pisk eggene sammen med fløten og saltet.
  • Smelt halvparten av smøret i en litt-lett stekepanne. BRUK LAV VARME.
  • Tilsett eggeblandingen og rør hele tiden. Fortsett med lav varme.
  • Del resten av smøret i 6 biter.
  • Tilsett finhakket gressløk om du ønsker å ha det i.
  • Når eggeblandingen begynner å stivne tilsett en smørbit og rør til den har smeltet og er tatt opp av eggeblandingen.
  • Fortsett til alt smøret er rørt inn i eggene.
  • Eggerøren skal være bløt, men ikke rennende.

Server sammen med spekemat, eller røkelaks.
