I dag byr jeg på panerte kalveschnitzler. Du må bare tro meg, disse schnitzlene  – scaloppine milanese, som de også kalles, er rett og slett ualminnelig gode. Her snakker vi om mørt, mildt kalvekjøtt som har en sprø skorpe av brød og ost og stekt i smør. Bedre kan det neste ikke bli. Jeg kan godt innrømme at det kan være litt klinete å lage, særlig de første gangene før man får helt dreisen på det. Men det er altså virkelig verdt det. For dette er noe som både store og små liker og det tar faktisk ikke så lang tid å lage heller, når man først får dreisen på det.

Jeg lagde disse i påsken, og trodde jeg hadde flere sitroner liggende. De var det imidlertid noen som hadde brukt til noe annet i mellomtiden, og siden utvalget av butikker er sterkt begrenset i påsken, ble det ingen sitron ved siden av. I stedet skar jeg  opp noen tomater i små terninger til å ha på toppen. Disse tomatene er selvsagt ikke like syrlige som sitron, men byr allikevel på litt friskhet som jeg synes passer godt. Dessuten har jeg faktisk fått en scaloppine milanese servert på den måten i Milano, så da må det jo være greit. Foretrekker du sitron er det selvsagt også veldig godt.

Dersom du ønsker en saus ved siden av, kan du ta en kikk på denne oppskriften på schnitzel med sitronsaus.

Disse schnitzlene kan også lages med kyllingfilet, eller svinekjøtt. Kyllingfileten kan da snittes nesten tvers igjennom slik at den kan åpnes som en bok og dermed blir dobbelt så stor. Dersom du vil lage dette med svin, kan du bruke ytrefilet som skjæres i litt tykke skiver og bankes til de blir ca. 1/2 cm tykke. Uansett hvilken variant du velger, er dette kjempegodt.

Ingredienser

  • 4 tynne skiver kalvefilet (mørbrad el. lign.)
  • 2 egg
  • 2 dl griljermel eller panko
  • 2 ss hvetemel
  • 1 dl fint revet parmesan
  • 1 ts salt
  • nykvernet pepper
  • Olje/smør til steking
  • 3 tomater

Fremgangsmåte

  • Bland hvetemel, salt og pepper i en plastpose, og la oppi kjøttet. Bland godt så kjøttet er dekket med melblandingen. Rist av overflødig mel.
  • Pisk eggene sammen i en suppetallerken eller lignende.
  • Bland griljermel og parmesan i en annen suppetallerken.
  • Dypp kjøttskivene først i de sammenpiskede eggene og deretter i griljermelblandingen.
  • Varm en blanding av smør og olje til middels varm panne og stek kjøttet til det er pent gyllent på begge sider. Det skal ikke steke mer enn et par tre minutter på hver side.
  • Skjær tomatene i båter. Ta ut kjernene og skjør tomatkjøttet i små terninger.

Server kjøttet med litt tomater på toppen og gjerne med ovnsbakte poteter ved siden av. Har du sitron er det også godt å klemme over kjøttet.

Schnitzel er kun et kjøtt med kalv.Du kan ikke tulle med denne retten med kylling eller svin.

Tja, nå er jo denne oppskriften med kalv da. Ellers synes jeg det fint går an å bruke svinekjøtt som erstatning. Det er jo ikke alltid så lett å få tak i kalvekjøtt. Men du har selvsagt rett til din mening 🙂
