Har du av og til lyst til å slå hardt til noen, eller på annen måte få ut litt aggresjon? Da kan jeg anbefale deg i stedet å lage schnitzel i stedet. Det er ikke voldelig eller går ikke ut over noen og i stedet får du en nydelig middag. Hemmeligheten med schnitzler er nemlig etter min mening å få banket kjøttet så tynt som mulig (i hvert fall nesten) uten at det går i stykker.  For å få til det bruker jeg en kjøtthammer. Men det går nok fint å bruke en tung stekepanne eller noe annet flatt med litt tyngde på også. Poenget er i hvert fall som nevnt at kjøttet skal bli tynt.  Så paneres kjøttet før det stekes i rikelig med fett til det blir gyllent på begge sider. Dette går fort så pass godt på. Steker det for lenge kan paneringen bli brent og kjøttet tørt. Og det er det jo ingen som er tjent med – hverken den du vil klappe til eller du. Og det er heller ikke noe vits å spare på fettet når du steker. Det blir bare rett og slett ikke så godt om man er gjerrig med det.

Her har jeg laget en frisk sitronsaus ved siden av schnitzlene. Det ble riktig så godt og friskt til. Sitroner kan være mer eller mindre syrlige. Begynn derfor gjerne med litt mindre sitronsaft og tilsett heller mer dersom du synes at sausen kan være mer syrlig. Det er lettere å tilsette mer enn å fjerne noe.

Har du et tørt brød liggende, er det fint å male opp det og bruke det til paneringen. Hvis ikke går det helt fint med griljermel eller panko. Sistenevnte synes jeg blir litt for store biter, men det er jo en smakssak. De er jo ganske luftige i hvert fall.

Ingredienser

  • 600 gr ytrefilet av svin
  • 1 dl hvetemel
  • 1 ss salt
  • rikelig med nykvernet pepper
  • 2 egg
  • 1,5 dl brødsmuler/griljermel/panko
  • olivenolje / margarin til steking
  • 1/2 sitron, saft og skall
  • 50 + 50 gr smør
  • 1 ss hvetemelblanding
  • 2 dl vann

Fremgangsmåte

  • Del svinefileten opp i 8 like tykke skiver og bank skivene flate med en kjøtthammer. De skal være ca. 1/2 cm tykke.
  • Bland hvetemel, salt og pepper på en tallerken. Ha eggene i en skål og pisk dem lett sammen. Legg brødsmulene på en tallerken.
  • Vend så kjøttskivene først i hvetemelet, så i eggene og til slutt i brødsmulene.
  • Varm en blanding av olivenolje og magarin i en stekepanne. Stek schnitzelene på middels sterk varme i et par minutter på hver side. De skal bli pent gyllen på begge sider, men det må gå ganske fort så de ikke blir tørre.
  • Legg schnitzelene over på et serveringsfat etterhvert som de blir ferdige og sett i ovnen på lav varme (60 grader) for å holde dem varme til servering.
  • Lag sitronsausen ved å smelte 50 gr av smøret i en gryte. Ha 1 ss av melblandingen fra kjøttet i melet og rør godt. Ha oppi vannet og rør kraftig så det ikke blir klumper. Ha oppi sitronskallet og litt av sitronen og la det koke inn til det har tyknet. Smak på sausen om den trenger med sitronsmak og tilsett evt. litt mer. Ta sausen av varmen og rør inn resten av smøret i sausen.

Server med kokte poteter og dampede grønnsaker eller en frisk grønn salat. Vel bekomme.

Tips

I Italia lager de som regel dette med kalvekjøtt. Det er selvfølgelig deilig, men ikke så tilgjengelig og langt dyrere enn svin. Du kan selvsagt erstatte svinekjøttet med kalv eller også med kylling.
