Karbonader er populær mat, både hos store og små. Selv husker jeg farmors karbonadesmørbrød til festlige anledninger. Det var stas å sette tennene i et deilig karbonadesmørbrød med stekt løk og sylteagurk. Hvor vanlig det er i dag – å servere karbonadesmørbrød, vet jeg  ikke, men det er slett ikke en dårlig idé dersom man skal ha gjester. Mer vanlig er det vel i dag å servere dem til middag med poteter og grønnsaker til. Det er i hvert fall det vi pleier å gjøre.

Ingredienser

  • 800 gr. karbonadedeig
  • 1 ½ ts salt
  • grovkvernet pepper etter smak
  • 2 ts potetmel
  • 8 ss vann

Fremgangsmåte

  • Bland salt, pepper og potetmel inn i karbonadedeigen og spe med vannet.
  • Bland alt godt, men ikke rør for mye – ellers blir konsistensen feil.
  • Del deigen opp i enten 4 store, eller 8 små emner som du ruller til en ball og trykker flate på en fuktig fjøl.
  • Trykk ballene flate og hakk et svakt rutemønster med kniv i karbonadene.
  • Stek dem et par minutter på hver side.
  • Dersom du lager små er kanskje 1 ½ min på hver side nok. De skal fortsatt være saftige og lett rosa inne.

Server med ovnsbakte potetbåter, og tomat og avokadosalat, eller som smørbrød med salat, stekt løk, sylteagurk og tomat.
