En gang i tiden av smørbrød noe man smurte med stor omhu og serverte i fine selskaper. Jeg kan i hvert fall huske at mine bestemødre serverte fat med påsmurt i kambriumsilurtiden da jeg var barn. Nå har jeg inntrykk av at denne tradisjonen mer eller mindre har dødd ut, og det synes jeg er synd. Så vidt jeg vet er det stort sett bare i begravelser og kanskje i kaffeslaberas der gjennomsnittsalderen er over 90 at de fortsatt brukes. Derfor har jeg tenkt til å plukke frem noen klassiske smørbrød både fra Norge og ikke minst fra landet der de virkelig tar smørrrebrød på alvor – Danmark. Jeg begynner kavalkaden med biff tartar smørbrød.

Biff tartar er for de som ikke vet det, rått biffkjøtt som er rørt sammen med rå eggeplomme og forskjellige smakstilsetninger. Det kan være finhakkede kapers, rødbete, løk, persille, sylteagurk og sauser som worcestersaus, sennep eller ketchup. Noen serverer alt hver for seg, slik at gjestene kan lage sin egen blanding. Det synes jeg blir litt klinete, derfor foretrekker jeg å blande ferdig på forhånd. Jeg liker å servere det på toast, mens andre vil spise det med pommes frittes og salat ved siden av. Valget er ditt, men her er det altså smørbrød det er snakk om så da sier det seg jo selv at det serveres oppå toasten.

Smørbrød er egentlig ganske genial mat. I utgangspunktet er det jo bare en brødskive med pålegg på, og det er bare fantasien som setter grenser. En ting jeg synes er viktig er at smørbrødene er høye. Hvis ikke er det bare brødskiver. En annen ting er at de skal pyntes. Hva som er på er imidlertid ganske så fritt. Det er for eksempel en utmerket måte å bruke middagsrester på. Mye kan brukes; kokt og stekt kjøtt kan skjæres pent opp og legges på. Det samme kan man gjøre med fisk, ost eller grønnsaker. Det som virkelig skiller smørbrødet fra brødskiva er garnityret. Det skal være lagt pent på skivene så man virkelig blir fristet.

Oppskriften på biff tartar kommer fra en artikkel i magasinet D2 med Eyvind Hellstrøm. Hans oppskrift er litt større, så jeg har tilpasset den litt. Jeg synes fortsatt at det er rikelig til to personer. Og særlig dersom de skal serveres sammen med andre smørbrød.

Ingredienser

  • 200 g grovkvernet biffkjøtt eller karbonadedeig
  • 2 eggeplommer 
  • 2 ts kapers, finhakket
  • 1 toppet ts dijonsennep
  • 2 ts worcestersaus
  • 2 ts ss ketchup
  • 2 dråper tabasco
  • 2 ss olivenolje
  • 2 ts sjalottløk, finhakket
  • 2 ts persille, finhakket
  • evt. salt og pepper
  • 2 skiver brød
  • 2 eggeplommer til pynt
  • 2 tynne rødløkringer

Fremgangsmåte

  • Bland alle ingrediensene unntatt de to siste eggplommene godt sammen.
  • Smak på kjøttet og tilsett evt, mer smakstilsetning om du liker det.
  • Toast brødet.
  • Del deigen i 2 og legg oppå brødskivene.
  • Topp smørbrødene med en løkring med eggeplomme opp.

Server gjerne sammen med en frisk grønn salat.

Tips

Dersom disse smørbrødene skal serveres sammen med andre smørbrød, kan de med fordel deles i to, slik at det blir fire snitter/smørbrød.
