For meg kommer fiskekaker i den kategorien mat som engelskmennene kaller comfort food, altså mat som man tyr til når man trenger noe godt og trygt. De bringer frem minner fra barndommen. Mine besteforeldre bodde i Nord-Norge og hadde rikelig tilgang på fersk fisk. Noe av det beste jeg visste var å krype opp på kjøkkenbenken og få en nystekt fiskekake på gaffel mens mormor fortsatt sto ved komfyren og stekte flere. Med andre ord er dette mat som smaker lykkelig barndom, sommer, ferie og mormor. Ikke rart at det kan være trøstemat også.

Av og til får jeg en skikkelig aha-opplevelse. Det gjorde jeg i går. Fiskekaker i hamburgerbrød har lenge vært en redningsplanke når jeg skal lage barnevennlig middag på kort tid. Jeg har imidlertid hatt det for meg at det er veldig vanskelig og veldig tidkrevende å lage fiskekaker. Derfor har jeg kjøpt ferdige i butikken. Dette har irritert meg en del, for jeg vil helst lage maten fra bunnen av. Men etter å ha lest Inas post om fiskekaker bestemte jeg meg for å prøve. Og wow, det var jo kjempeenkelt. Det tok ikke lang tid heller. Litt tid tok det jo å steke fiskekakene, men å lage fasen var gjort på null komma null. Oppskriften nedenfor er omtrent som Inas, jeg har bare justert litt på den med å ta mindre fløte og litt mer salt.

Når man lager fiskekaker er det viktig at alle ingrediensene er kalde. Det er også viktig å bruke fersk fisk. Frossen fisk mister bindeevnen. Lag heller en stor porsjon og frys ned. Det går bra.

Ingredienser

  • 500 gr fersk hysefilet
  • 1,5 dl melk
  • 0,5 dl fløte
  • 1 ss potetmel
  • 1 egg
  • 2 ts salt
  • nykvernet pepper
  • 2 ss gressløk
  • olje/margarin til steking

Fremgangsmåte

  • Skjær fisken i biter og kjør den sammen med salt i en food processor i ett halvt minutt.
  • Ha i resten av ingrediensene og kjør det til en farse.
  • Du bestemmer selv hvor fin eller grov den skal være.
  • Form fiskekaken med en skje dyppet i kaldt vann og hånden (som også er dyppet i kaldt vann). Da setter farsen seg ikke fast.
  • Stek fiskekakene på middels varme til de blitt gylne på utsiden og gjennomstekt. Det tar kanskje 4-5 minutter på hver side.

For skikkelig retrofølelse, server dem varme med revne gulrøtter, kokte poteter og smeltet smør.
