I dag ble det en skikkelig luksusmiddag selv om det bare er en helt vanlig torsdag. I går var jeg nemlig så heldig å få en stor pose full med helt nydelige kantareller. Det måtte derfor bli noe med kantareller til middagen. Valget falt på noen flotte torskefileter. Jeg synes torsk med kantareller er en aldeles nydelig kombinasjon. Den salte og friske fisken står flott til soppens smak av skog.

Ingredienser

  • 600 gr torsk
  • 1/2 dl hvetemel
  • 2+2 ts salt
  • nykvernet pepper
  • 2 ss smør + 2 ss olje til steking
  • 1/2 kg kantareller
  • 2 ss smør
  • salt og pepper

Fremgangsmåte

  • Dryss torskefiletene med 2 ts salt og la dem stå i ca. 10 minutter.
  • Rens kantarellene.
  • Stek dem i godt smør og smak til med salt og pepper. Sett til side og hold varme.
  • Bland hvetemel, 2 ts salt og nykvernet pepper i en skål.
  • Skyll saltet av fisken og klapp den tørr med litt tørkepapir.
  • Legg fisken i skålen med melblandingen og sørg for at fiskefiletene er helt dekket av mel. Rist av overflødig mel.
  • Stek fisken på middels høy varme i smør/oljeblandingen til den har blitt pent brun utenpå og begynner å flake seg. Da er fisken ferdig.

Anrett på tallerkner og server kokte poteter og dampede grønnsaker ved siden av. Litt sitron klemt over fisken er også godt.
