Jeg tror nesten at alle land har sine kjøttkaker.  Og over alt anses det som trøstemat. Når alt annet går skeis, kan vi i hvert fall trøste oss med disse deilige kjøttkakene som bare mor lagde dem. I Norge har vi våre kjøttkaker som er smakt til med ingefær og muskat. I Sverige har de sine kjøttbullar og i Danmark har de altså sine frikadeller. Frikadeller kan lages med litt forskjellig slags kjøtt. Noen ganger lages de bare med svinekjøtt, mens andre ganger blandes svinekjøtt med kalve- eller oksekjøtt. For at det ikke skal bli helt som medisterkaker, bruker jeg en blanding av svin og okse i mine frikadeller.

Mine frikadeller er deilig saftige og har en svak smak av allehånde. Litt jobb er det jo med å forme og steke alle kakene, men det er verdt det når alle rundt bordet sukker fornøyd etter middagen.  Jeg liker godt å servere dem med klassisk tilbehør som kokte poteter, brun pannesaus og kokte grønnsaker. Noen foretrekker å sile sausen, slik at små stekebiter og annet blir borte, men det synes jeg ikke er nødvendig.

Som følge av en liten innkjøpsbommert ble denne oppskriften ekstra stor. Jeg registerte nemlig ikke før jeg skulle til å lage frikadellene at kjøttdeigen kom i en 600 gr. pakke i stedet for den vanlige 400 gr. pakken. Du kan selvsagt lage med 800 gr. kjøtt i stedet for en kilo som jeg gjorde. Da må du bare huske å redusere mengden av det andre litt. Ikke at det gjør noe å lage en litt større porsjon. Dette er mat som tåler godt å fryses ned og det er alltid populært å finne en frikadelle eller to i matboksen dagen etter.

Ingredienser

  • 400 gr svinekjøttdeig
  • 600 gr kjøttdeig
  • 1 stor løk
  • 1 ss salt
  • 2 ss hvetemel
  • nykvernet pepper
  • 1/2 ts allehånde
  • 2 store egg
  • 1,5 dl melk
  • smør og olje til steking
  • --
  • 3 ss hvetemel
  • 4 dl vann
  • 1 buljongterning
  • 1 ts dijonsennep
  • 1 ts ripsgele
  • (evt. sukkerkulør)

Fremgangsmåte

  • Riv løken på den grove siden av rivjernet.
  • Bland sammen kjøtt, løk, salt, pepper, hvetemel og allehånde til det er en seig deig.
  • Tilsett eggene og kna til alt er godt blandet.
  • Spe med melken og rør til det er en jevn deig.
  • Form frikadellene med en skje.
  • Varm olje og smør i en stekepanne og stek frikadellene på middels varme til de er pent brune.
  • Legg dem over i et ildfast fat og sett dem inn i ovnen på 100 grader for å holde dem varme.
  • Rør hvetemelet ut i resten av stekefettet og la det surre et par minutter til blandingen har fått farge.
  • Spe med vannet og tilsett buljongterningen.
  • Smak til med  sennep og ripsgele og tilsett evt. noen dråper sukkerkulør om du synes sausen er for lys.
  • Legg frikadellene tilbake i sausen og legg på lokk. La dem trekke på svak varme til de er helt gjennomstekte. Ca. 10 minutter.

Server med kokte poteter og grønnsaker. Vel bekomme.
