Kjøttkaker, det er vel ingen som sier nei takk til gode hjemmelagede kjøttkaker.Det gjør i hvert fall ikke jeg. Kjøttkaker bringer frem gode barndomsminner. Uttrykket «ingenting er som mors kjøttkaker» er vel ikke tatt rett ut av luften. Kjøttkaker er det engelskmennene kaller comfort food – mat som trøster og gir gode føleleser.

Det finnes nok veldig mange slags oppskrifter på kjøttkaker og form og størrelse varierer nok også en god del. Jeg synes det er godt å blande inn litt finrevet rå løk i kjøttdeigen. Jeg vet andre bruker å finhakke og steke løken først og atter andre vil ikke ha i løk i det hele tatt. Når det gjelder krydring er det tilsvarende mange meninger. I tillegg til salt og pepper som er obligatorisk er det vanlig å bruke ingefær, allehånde eller muskat og noen tilsetter litt sennep. Selv liker jeg godt ingefær. Når det gjelder størrelsen liker jeg at kjøttkakene ikke er alt for store, mine former jeg som litt store golfballer og så klemmer jeg dem ørlite grann flate i pannen.

Ingredienser

  • 800 gr kjøttdeig
  • 1 liten løk
  • 3 dl vann
  • 6 ss brødsmuler eller griljermel
  • 2 egg
  • 1 ts salt
  • nykvernet pepper
  • 1/2 ts malt ingefær
  • --
  • 2 ss smør (eller melkefri margarin)
  • 2 ss hvetemel
  • 5 dl vann
  • 1 buljongterning
  • evt. sukkerkulør

Fremgangsmåte

  • Begynn med å la brødsmulene svelle i vannet i ca. 10 minutter.
  • Riv løken på et rivjern.
  • Bland kjøttdeig, løk, krydder og egg sammen og bland deretter inn det oppbløtte brødet og vannet. Sørg for at alt er godt blandet.
  • Varm opp margarin og stek en liten prøve. Smak på den og juster evt. krydringen.
  • Form resten av deigen til kuler litt større enn golfballer og trykk dem litt flate i stekepannen.
  • Stek kjøttkakene til de er pent brune på begge sider.
  • Når kjøttkakene er blitt brune på begge sider legges de over i sausen og får trekke til de er kokt tvers i gjennom.
  • Mens kjøttkakene steker lages sausen. Bruk en kasserolle som er stor nok til å romme alle kjøttkakene. Brun smør (margarin) og mel til det har fått en nøttebrun farge. Pass på at det ikke blir brent, så du må røre mye. Når det har blitt brunt tilsettes vannet og buljongen og kok opp. Tilsett noen dråper sukkerkulør dersom du synes sausen ser litt blass ut.

Server med kokte poteter og grønnsaker eller stuet kål. Velbekomme!

Noe av det beste, hjemmelagde kjøttkaker. Jeg serverer alltid kålstuing til.

Skal prøve med ingefær neste gang. Har laget med Muscat og med Allehånde før – har ikke tenkt på ingefær (som jeg liker godt)
Oftest blir det ertestuing og rørt tyttebær til

Takk for hyggelig tilbakemelding. Nå må jeg nok prøve med allehånde neste gang. Jeg bruker det i medisterkakene mine, men har ikke tenkt på det sammen med kjøttkaker.
