Hva er vel bedre enn en deilig gryterett når høstvindene hyler rundt hushjørnene, eller den første frosten biter i nesetippen? Fint lite, mener i hvert fall jeg. Ungarsk gulasj innfrir på alle punkter. Her er kjøttet kokt så lenge at det nesten faller fra hverandre. Sausen er fyldig og full av smak fra tomat og paprika og med poteter i gryten er det ikke behov for så mye mer. Kanskje litt brød og evt. en grønn salat ved siden av.

Du kan selvsagt droppe potetene og heller lage potetstappe ved siden av hvis du absolutt vil det. Jeg synes imidlertid det er så greit når alt er i en og samme gryte.  Det ser kanskje ut som om det er en omstendelig oppskrift, men det er i grunnen ikke det. Ting skal bare gjøres i etapper, men når alt er i gryten kan den helt fint passe seg selv.

Har du andre ting å gjøre enn å henge på kjøkkenet og følge med på at alt står bra til oppi gryten og at det ikke setter seg fast i bunnen, kan du sette hele gryten inn i ovnen. Da passer den seg i hvert fall helt selv.

Ingredienser

  • 1 kg høyrygg
  • 2 store gule løk
  • 3 fedd hvitløk
  • olje til steking
  • 2 ss paprikapulver
  • 1/2 glass tomatpure
  • 3 store, røde paprika
  • 1 boks tomater
  • 1/2 l oksefond (evt. vann + terning)
  • 1 rød chili
  • 6 middels store poteter (kokefaste)
  • Salt og pepper

Fremgangsmåte

  • Skjær kjøttet i 2x2 cm store terninger.
  • Skjær løk i tynne båter og hakk hvitløken.
  • Brun kjøttet slik at det er pent brunt på alle sider i litt olje på høy varme. Det kan være lurt å gjøre det i flere omganger.
  • Ta kjøttet ut av gryten og brun løk og hvitløk på middels varme.
  • Når løken har blitt myk og falt sammen, tilsett paprikapulver og fres et par minutter til.
  • Tilsett tomatpureen og la det putre sammen med løk og paprikapulver enda et par minutter.
  • Ha kjøttet tilbake i gryten og hell over tomatboksen og oksefonden.
  • Skjær paprikaen i biter og hakk chilien fint. Ha begge deler oppi gryten.
  • Legg på lokk å la det koke i minst 1 time på middels lav varme.
  • Skjær potetene i terninger, og ha oppi gryten. Rør godt og la det koke i minst en time til, helt til alt er fullstendig mørt.
  • Smak til med salt og pepper.

Server rykende varm med godt brød ved siden av og gjerne en grønn salat også.

Tips

Det går fint an å sette gryten inn i ovnen i stedet for å ha den på platen etter at alle ingrediensene er kommet opp i gryten. Sett da ovnen på 160 grader. Fordelen er da at det er null sjanse for at det setter seg fast i bunnen. NB: Bare pass på å bruke en gryte som tåler å stå i ovnen.
