Hjemme hos oss er vi ekstremt glade i cherrytomater, og spiser dem som snack til alle døgnets tider. Dersom jeg har planer om å bruke dem til noe spesielt, må jeg gjemme dem, eller skrive på pakken at de ikke må røres. Ellers er de borte før jeg får sagt «confiterte cherrytomater». Men de gangene jeg greier å gjemme dem unna og lager dette, er det veldig populært tilbehør til de fleste kjøtt- og fiskeretter. Confiterte cherrytomater høres kanskje veldig fancy ut og det er sykt godt. Men det er ikke noe annet enn ovnsbakte cherrytomater i litt ekstra mye olje.

Normalt når man confiterer noe bakes det helt nedsenket i sitt eget fett. Tomater har jo som kjent ikke så mye fett, så da får olivenolje gjøre nytten. Jeg dekker heller ikke tomatene fullstendig med olje når jeg lager confiterte cherrytomater, men er ikke akkurat gjerrig heller. Det skal være rikelig. Du trenger imidlertid ikke bruke den dyre virgin olivenoljen til dette. De vare nyansene i den dyre oljen vil uansett bli borte i varmebehandlingen og aromaen fra hvitløken. Du trenger imidlertid ikke spise all oljen med en gang. Men den har nemlig fått en god smak, og kan med hell gjemmes og brukes i salatdressinger eller til noe annet du bruker olivenolje til.

Ingredienser

  • 1 kg cherrytomater (gjerne på kvisten)
  • 1 hvitløk
  • 1 dl olivenolje
  • timian
  • 1/2 ts salt
  • nykvernet pepper

Fremgangsmåte

  • Sett ovnen på 125 grader.
  • Skyll tomatene godt og la dem tørke.
  • Skjær hvitløken i 10 og legg i et ildfast fat sammen med tomatene.
  • Hell over olivenoljen og tilsett salt, pepper og timian.
  • Stek tomatene i ca. 1,5 timer.

Server varm eller romtemperert sammen med stekt kjøtt eller fisk.

Tips

Ta vare på oljen. Den får en deilig smak av tomat og hvitløk og egner seg veldig godt til å lage dressinger med, eller dryppe over kjøtt, eller til å dyppe godt brød i.

Ovnsbakte tomater er kjempegodt! Får frem alle de gode smakene når tomatene blir møre! Sammen med hvitløk og timian blir det et perfekt tilbehør!

Har ikke forsøkt denne oppskriften med cherrytomater i olivenolje, men ble veldig fristet!
