Etter min mening bør denne potetsalaten stå på et hvert koldtbord og være følge til all spekemat. Den bløte rømmen er ypperlig følge til alt det salte kjøttet. Dette er potetsalat slik jeg lærte å lage den av mamma. Jeg husker varme sommerdager hvor hun sto på kjøkkenet og blandet rømme/majones-dressingen som ble helt over de nettopp avkjølte potetene. Mitt bidrag var ofte å gå ut i hagen og plukke inn rikelig med gressløk til å klippe over. Å sette seg til bords etterpå med potetsalaten og spekematen var fest uansett om det var hverdag eller fest.

Ingredienser

  • 800 gr. kokte poteter
  • ½ gul løk
  • 5 skiver sylteagurk
  • ½ rømmebeger
  • 3 ss majones
  • 1-2 ts sennep
  • 2 ss lake fra sylteagurkglasset
  • Salg og pepper
  • Gressløk til pynt

Fremgangsmåte

  • Skjær de kokte og avkjølte potetene i terninger ca. 1,5x1,5 cm store.
  • Skjær løken i terninger og  hakk sylteagurken i småbiter.
  • Bland sammen rømme, majones, sennep og sylteagurklake og smak til med salt og pepper og ha i sylteagurken.
  • Hell sausen over potetterningene, løken og agurkbitene og bland godt

La gjerne potetsalaten stå kaldt noen timer før du serverer, du kan gjerne lage denne dagen i forveien.
