Forsommer og rabarbra hører sammen. Som barn elsket jeg å sitte på trappen med en kopp sukker og dyppe rabarbrastilker oppi for så å suge av sukkeret og ta en liten bit. Mmmm, både syrlig og søtt på en gang. De syrlige stilkene kan sammen med sukker bli til en masse deilige desserter og bakverk. På varme forsommerdager synes jeg det er aldeles nydelig å avslutte en middag med kald rabarbrasuppe. Det er kanskje litt uvant å skulle spise kald suppe, men jeg lover: kald rabarbrasuppe er veldig forfriskende og deilig på en varm dag. På litt kjøligere dager kan det friste mer med rabarbrakake til kaffen eller en brødskive med rabarbrasyltetøy.

Denne rabarbrasuppen er utrolig enkelt å lage og servert kald er den veldig leskende i varmt sommervær. Den har en fin syrlig smak med et hint av kanel og vanilje. Oppskriften til rabarbrasuppen kommer fra Bent Stiansens kokebok ”Stiansen til hverdags”.  Jeg har bare justert litt på mengden, for den foreslåtte porsjonen er alt for liten for vår familie.

Det er vanlig å si at rabarbra bør spises før St. Hans. Men for et par år siden så jeg et program på TV om en rabarbrabonde i England, og ha høstet rabarbra helt til høsten kom. Trikse er tydelig vis å vri/lirke stilken opp av jorden og ikke skjære av stilken. Skjæremetode kan visstnok skade roten og hindre ny vekst. Ikke vet jeg, men siden da har jeg i hvert fall brukt denne metoden. Dessuten høster jeg bare de nye spede stilkene og lar de grove bli stående. På den måten er det mulig å forlenge sesongen en hel del. Problemet med gammel rabarbra er ikke at den blir dårlig på smak, men at den blir grov og treen og dermed lite god å spise.

Ingredienser

  • 500 gr. rabarbra
  • 7 dl vann
  • 1,5 dl sukker
  • ½ vaniljestang
  • evt. 1 kanelstang
  • 1 kurv jordbær

Fremgangsmåte

  • Skyll rabarbraen og skjær i ca. 1 cm tykke skiver.
  • Ha alle ingrediensene i en gryte og kok opp og la det småkoke i ca. 15 minutter.
  • Ta gryten av platen og sil suppen.
  • Avkjøl suppen først på kjøkkenbenken og senere i kjøleskapet. Den er best når den er helt kald.
  • Rens jordbærene og skjær dem i biter. Ha jordbærene i suppen og server.

Suppen kan også serveres med panacotta, stivpisket mascarpone eller vaniljeis.
