Mange tenker på blåskjell som sommermat, men faktum er at det er nå i den kalde årstiden at blåskjellene er aller best. Så det er absolutt ingen grunn til å vente til sommeren med å spise disse små lekkerbiskenene. Som regel når vi har blåskjell damper jeg dem i en gryte med litt grønnsaker, urter og vin eller sitron. Det er herlig, enkel mat. Men i dag hadde jeg lyst til å lage en variant med å gratinere dem. Det ble kjempegodt. Jeg skal ikke underslå at det er litt pirkearbeid, men jeg synes absolutt det er verdt det.

Først dampet jeg blåskjellene som vanlig før jeg gratinerte dem under grillen. Jeg smaksatte dem med løk, fennikel og hvitløk. Fennikel er en grønnsak som jeg synes passer utrolig godt til fisk og sjømat. Den har en svak anissmak som kler det litt søte blåskjellkjøttet ypperlig.

Disse blåskjellene kan fint spises som forrett eller en selvstendig rett med litt loff og en grønn salat ved siden av, men de egner seg også glimrende sammen med andre retter på et tapasbord. Aller best synes jeg de var varme, men de kan også fint spises romtempererte.

Alle grønnsaker kommer selvsagt i forskjellig størrelser, men denne gangen hadde jeg fått en fennikel som var enormt stor. Jeg har derfor oppgitt mengden i hakket tilstand. Det er imidlertid ikke finhakket, men hakket slik at det går å måle det opp i spiseskjeer. Til dampingen av blåskjellene kan grønnsakene være slik, mens til gratineringen må de finhakkes helt etter at de er målt opp.

  • 4 ss fennikel hakket
  • 2 fedd hvitløk
  • 2 ss olje
  • 1 dl hvitvin

Fremgangsmåte

  • Begynn med å skylle blåskjellene og rens dem for rur og skjegg.
  • Hakk løk, fennikel og hvitløk.
  • Varm oljen i en stor gryte og fres grønnsakene til de har blitt myke og blanke.
  • Ha oppi blåskjellene og hvitvinen og legg på lokk. Damp blåskjellene i 3-4 minutter og rist på gryten et par ganger.
  • Sett til side og la det avkjøle seg litt.
  • Sett ovnen på grill.
  • Finhakk fennikel, løk, hvitløk, loff og ost, eller kjør alt med stavmixer/blender til det har blitt en fin masse helt uten klumper.
  • Legg et stort ark med aluminiumsfolie som krølles lett sammen på et stekebrett. Del blåskjellene i to og legg et halvt skjell med innmaten oppi på aluminiumsfolien.
  • Fordel massen over skjellene og legg på en ørliten smørklatt oppå hvert skjell.
  • Sett rett under grillelementet og gratiner. Det tar bare to-tre minutter, så følg godt med.
