Brokkoli er en av mine favorittgrønnsaker. Som regel koker, damper eller woker vi den. Av en eller annen grunn har det ikke falt meg inn å lage suppe av den tidligere. Det er i grunnen veldig rart, for jeg er en skikkelig suppoman og spiser suppe så ofte jeg kan – og særlig om vinteren. I går lå det en struttende brokkoli i kjøleskapet, men på menyen sto det penne arrabiata, og jeg hadde ikke lyst til å ha kokt brokkoli ved siden av. Løsningen ble å lage en kjapp brokkolisuppe til forrett. På den måten fikk vi spist opp brokkolien mens den var på topp og vi fikk pastaen vår også.

I kjøleskapet lå det også noen vårløk som fikk følge med oppi suppen. Men før de ble suppe bakte jeg grønnsakene litt i ovnen for å få frem smakene enda bedre. Når de var ferdig i ovnen slang jeg dem oppi en gryte sammen med resten av ingrediensene og kokte til det var mørt. Deretter kjørte jeg det glatt med stavmixeren og smakte til med salt og pepper. Voila, en herlig, velsmakende næringsrik suppe.

Oppskriften nedenfor er en forrett for fire personer, men den kan også serveres som hovedrett med brød ved siden av doble da mengden.

Ingredienser

  • 1 brokkolibukett
  • 4 vårløk
  • 1 ss rapsolje
  • 7 dl vann
  • 1 terning grønnsaksbuljong
  • 1 dl matfløte
  • salt og pepper

Fremgangsmåte

  • Sett ovnen på 225 grader.
  • Del brokkolien i små buketter og skjær vårløken i skiver.
  • Legg grønnsakene i en ildfast form og drypp med rapsoljen. Bak i ca. 15 minutter. Ta grønnsakene ut når de har blitt litt brune i kantene og litt myk.
  • Ha dem i en gryte og hell over vannet. Kok opp og tilsett buljongterningen og kok til brokkolien er helt myk.
  • Kjør helt jevnt med stavmixer og tilsett fløten. Smak til med salt og pepper og varm suppen helt gjennom.

Serveres rykende varm, og gjerne med litt ekstra fløte helt i en tynn stråle over for å lage et lite mønster oppå suppen.
