En gang i forrige årtusen bodde jeg en kort periode i New Delhi. Der var det naturlig nok god tilgang på indisk mat, og av like naturlige årsaker var det lite tilgang på annen type mat. Et spesielt tøft angrep av noen små amøber, gjorde at jeg ikke fikk så lyst på indisk mat sånn midtveis i oppholdet. Det var selvsagt ganske uheldig. Men til alt hell fantes det forskjellige typer brød, som naan, og enda bedre butter naan. Derfor levde jeg i stor grad på dette resten av tiden jeg var i India – det smakte liksom ikke så veldig indisk.

Direkte oversatt betyr naan brød. Det blir derfor litt smør på flesk å kalle det naanbrød. Derfor nøyer jeg meg med å kalle disse deilige brødene for naan. Naan egner seg svært godt til all indisk mat, og særlig curryer og andre gryteretter der det er saus å suge opp med brødet. I India spiser de slett ikke med bestikk, men bruker brødet til å ta opp maten og føre den til munnen med. Det er nok litt vel hard-core for de fleste nordmenn, men som sagt – til å suge opp sausen med er brødet genialt.

Denne oppskriften fant jeg på Trines matblogg. Brødene var slett ikke vanskelig å lage, og kan fint la seg gjøre på en hverdag, dersom du har litt god tid. Aller best smaker disse brødene nybakt, men de kan fint friskes opp i ovnen et par minutter dersom de blir liggende en stund før de skal spises. De kan nok også fryses, men det var ikke aktuelt hjemme hos oss.

Ingredienser

  • 1 pk tørrgjær
  • 4 ss lunken melk
  • 2 ss sukker
  • --
  • 450 gr. hvetemel
  • 1/2 ts bakepulver
  • 1/2 ts salt
  • 2 dl yoghurt
  • 1 dl melk
  • 1 egg
  • 2 ss smeltet smør
  • --
  • 1 fedd finhakket hvitløk
  • 50 gr smeltet smør

Fremgangsmåte

  • Bland først tørrgjær, melk og sukker i en liten skål. Sett det lunt til det begynner å danne små luftbobler (10-15 minutter).
  • Bland alle de tørre ingrediensene i en bolle og tilsett gjærblandingen, yoghurten, melken, smøret og egget.
  • Elt det i ca. 10 minutter i en kjøkkenmaskin, eller tilsvarende lenge for hånd.
  • Sett lunt og la det heve til deigen har blitt omtrent dobbelt så stor (ca. 45 min).
  • Sett ovnen på høyeste varme.
  • Del deigen i 8 emner og kjevle ut til avlange pølser.
  • Dryss litt finhakket hvitløk på hver leiv og stek i ca. 5 minutter.
  • Det er plass til 2-3 stykker i ovnen av gangen. De skal bli litt gyllen. De blåser seg opp, men det gjør ingen ting.
  • Legg brødene over på rist og pensle med smeltet smør. Legg dem under et klede til de skal serveres.

Best er de mens de fortsatt er litt varme.

Prøv en spiseskje eller to med sukker i deigen. I stedet for å kjevle pleier jeg å dra hvert stykke ut med hendene. Holder da til på en voksduk og bruker olje i stedet for mel. Jeg steker alltid naan på utegrillen ( selv i snøvær) synes de blir best med litt brente kanter 🙂
