Blomkålris har blitt veldig populært i den siste tiden og det er i grunnen ikke så rart. For dette er mat som er lett å lage, smaker godt og kan varieres i det uendelige. Her har jeg laget en variant med indisk smak. Denne blomkålrisen kan utmerket godt erstatte den vanlige basmatirisen som ofte serveres sammen med indisk mat. Skulle du være opptatt av å følge en lavkarbodiett eller bare er ute etter å spise mer grønnsaker, så er dette altså en super måte å erstatte hvit ris med noe som er mye sunnere.

Det indiske kjøkkenet er karakterisert av sitt utstrakte bruk av krydder – mange forskjellige krydder, og denne retten er ikke noe unntak. De fleste krydderne som brukes her er vanlige krydder som man kan få tak i i de fleste litt velassorterte butikker. Og dersom du liker indisk mat, er det ikke så dumt å ha disse på lur. Da er det fort gjort å kalle frem indiske smaker på kort tid.

Er ikke indisk noe for deg? Da kan du jo prøve den varianten som jeg lagde til SalmaChef konkurransen for en del år siden. Da serverte jeg den til confitert laks med fennikel.  Den gangen kalte jeg det riktignok for blomkålcouscous, rett og slett fordi det ikke var noen som snakket om blomkålris da.

Ingredienser

  • 2 store blomkålhoder
  • 3 sjalottløk
  • 2 fedd hvitløk
  • 1 ss fint revet ingefær
  • nøytral olje til steking
  • 2 ts korianderfrø
  • 2 ts fennikelfrø
  • 1 ts hel sort pepper
  • frø fra 5 kardemommekapsler
  • 1 ts garam masala
  • 1 rød chili
  • bredbladet persille

Fremgangsmåte

  • Riv blomkålhodene på et grovt rivjern, eller kjør det i en matmølle til det får en konsistens som små gryn.
  • Finhakk sjalottløk og hvitløk og fres dette i en panne på middels varme sammen med ingefæren i oljen et par minutter til løken har blitt blank og myk.
  • Knus krydderet grovt i en morter og ha det og garam masala oppi pannen sammen med løken.
  • La det surre et par minutter til.
  • Ha oppi blomkålen og la det frese til blomkålen begynner å bli myk.
  • Rør inn hakket chili og persille og server.
