Det er ikke så ofte man ser disse rakkerne i butikken. Så når de først dukket opp i fiskedisken måtte jeg selvfølgelig ta dem med hjem. Jeg har fått servert disse skjellene på restaurant et par ganger, og nå fikk jeg lyst til å tilberede dem hjemme. Jeg bestemte meg fort for at jeg hadde lyst til å lage gratinerte knivskjell av dagens fangst. Knivskjell har en deilig, mild og litt søtlig smak og kler veldig godt å få følge av løk, persille og smør.

Problemet mitt da jeg kom hjem var bare at jeg ikke ante hvordan de skulle tilberedes. Derfor måtte det heftig googling til. Søkeresultatene var imidlertid veldig sprikende så jeg kan ikke si at jeg ble veldig mye klokere. I butikken sa de at de skulle dampes som blåskjell. Ok, men hvor lenge da? Flere steder sto det at de skulle dampes i mellom 6 og 8 minutter. Med tanke på hvor store de ser ut hørtes det jo ikke helt galt ut. Men så leste jeg en historie om en dame i England et sted som sa de skulle kokes i 30 sek og deretter stekes i 30 sekunder. Ojda, hva nå? Heldigvis var det en stor batch med knivskjell, så jeg kunne eksperimentere litt og dette er hva jeg kom frem til. 6-8 minutter er alt for lang tid. 1-2 minutter holder.

 

Denne porsjonen med gratinerte knivskjell rekker nok ikke som hovedrett til fire personer.  Som forrett, eller en av flere sjømatretter passer den derimot helt perfekt.

Ingredienser

  • 1 kg knivskjell
  • 2 fedd hvitløk
  • 2 sjalottløk
  • olje til steking
  • 1 glass hvitvin
  • 2 ss finhakket bladpersille
  • 4 ss smør
  • 2 ss griljermel

Fremgangsmåte

  • Sett på grillelementet i ovnen
  • Vask skjellene.
  • Finhakk løk og hvitløk og fres det til det blir mykt i litt olje i en stor gryte.
  • Skru varmen på max og ha skjellene og vinen i gryten og legg på et lokk.
  • Damp i 1-2 minutter.
  • Ta skjellene ut av kraften og rens bort den delen som ser ut som et tulipanblad.
  • Legg de ferdig rensede knivskjellene tilbake i skjellene.
  • Sil kraften og legg ta vare på både kraften og løken.
  • Dryss legg på smørklatter, dryss på hakket persille, løken og griljermel og sett under grillen til de har fått litt farge.

Server med godt brød og gjerne en tørr hvitvin.
