Nå er det definitivt vår. Nye planter og blomster dukker daglig opp av jorden, fuglene synger og insektene har våknet til liv og surrer litt forvirret omkring på jakt etter noe å spise. Når solen i tillegg skinner og varmer litt, blir jeg direkte våryr. Og da jeg fant noen flotte asparges, som riktignok ikke var norske, men italienske, kunne jeg ikke annet enn å si buon giorno og ta dem med meg hjem. Her fikk de spille hovedrollen i en risotto med asparges og reker. Det ble en skikkelig god risotto som gjorde at det gode humøret mitt fortsatte lenge etter at den var fortært.

Jeg er veldig glad i italiensk mat og jeg synes at en risotto er en flott måte å servere aspargesene på. Sammen med rekene utgjør dette en super forrett eller en lett lunsjrett. Den ble også flott å se på med knall grønne aspargesbiter og lyserosa reker.

Beskrivelsen nedenfor ser kanskje lang og omstendelig ut, men det er i grunnen ganske så greit å lage risotto. Og jeg synes absolutt jeg ble belønnet for strevet når jeg satt der med en tallerken risotto med asparges og reker foran meg. Med et lite glass hvitvin i solen var dette en helt perfekt feiring av en av våren og forsommeren.

Ingredienser

  • 1 bunt asparges
  • 1 l vann
  • 1 ts salt
  • 500 gr reker
  • 2 dl carnaroliris
  • 2 sjalottløk
  • 1 fedd hvitløk
  • 1 dl tørr hvitvin
  • 50 gr revet parmesan
  • 50 gr smør

Fremgangsmåte

  • Skrell aspargesen og skjær av nederste del. Ta vare på skrellet og avskjæret.
  • Skjær aspargesen i 1 cm store skiver, men la toppene være hele.
  • Kok opp 1 liter lettsaltet vann og kok aspargesbitene i ca. 2 min. Ta dem opp av kokevannet og sett til side. IKKE hell ut kokevannet.
  • Ha aspargesskrellet oppi det samme vannet. La det koke i ca. 15 minutter.
  • Sil av kokevannet og ta vare på det. Det er dette du skal bruke til å spe risottoen med.
  • Pill rekene (bruk evt. ferdigpillede reker, men da trenger du bare omtrent halv mengde.
  • Finhakk sjalottløk og hvitløk og fres det i litt av smøret til løken har blitt blank og myk.
  • Tilsett risen og fortsett å steke 1-2 minutter, slik at riskornene blir dekket med smør.
  • Hell oppi vinen og la det koke på middels lav varme mens du rører i gryten.
  • Når all vinen er absorbert, tilsett litt av aspargesvannet. Fortsett å røre mens risen trekker til seg væsken.
  • Spe mer hver gang det ikke er mer fuktighet i gryten og fortsett å røre hele tiden.
  • Etter ca. 15 minutter skal risen være al dente. Det vil si at den nesten er ferdig, og at den bare har en liten hard kjerne igjen. Hvis risen ennå ikke er kokt slik du liker, fortsetter du å spe og røre til risen nesten er ferdig.
  • Rør inn parmesanen og bland godt. Pass på at risottoen har en ganske løs konsistens.
  • Tilsett smøret, aspargesen og rekene og bland godt. Ta av varmen og server straks.

Det er veldig godt med hvitvin til 🙂
