Pin

Squash finnes i rikt monn for tiden så det er bare å spise i vei. At squash er  ikke den grønnsaken med sterkest smak er vel ingen hemmelighet, men sammen med gode venner er den slett ikke så dum. Her har jeg laget en nydelig squashgrateng med parmesan og ris. Den fikk absolutt ståkarakter og passer ypperlig ved siden av kjøtt, kylling eller fisk. Eller hvorfor ikke spise den som en selvstendig rett med en frisk salat ved siden av.

Ingredienser

  • 2 middels store squash
  • 1/2 ts salt
  • 90 gr ukokt ris
  • olivenolje til steking
  • 1 middels stor rødløk
  • 2 fedd hvitløk
  • 2 ss hvetemel
  • 30 gr fint revet parmesan
  • 1 håndfull revet Jarlsberg

Fremgangsmåte

  • Forvarm ovnen til 200 grader.
  • Riv squashen grovt på et rivjern og bland med 1/2 ts salt. Legg over i et dørslag som settes over en bolle til å samle opp væsken som renner av. La stå i ca. 15. min.
  • Kok risen i lettsaltet vann i 5 min. Hell av vannet og sett til side.
  • Hakk løk og hvitløk og stek det i oljen til det har blitt blankt.
  • Klem så mye som mulig væske ut av squashen over bollen med det som allerede har rent av.
  • Ha risen oppi sammen med løken og stek et par minutter på middels varme.
  • Tilsett squashen og bland alt godt.
  • Ha oppi hvetemel og parmesan og rør til alt er blandet.
  • Mål opp 2,5 dl av squashvannet og hell oppi stekepannen. Dersom det ikke er nok væske så topp opp med vann til det er nok.
  • Hell alt over i en ildfast form og dryss over Jarlsbergosten.
  • Bak i ovnen i 20 minutter. Skru deretter over på varmluftfunksjon om ovnen din har det, hvis ikke øk temperaturen til 220 grader og stek videre i 10 minutter.
  • Gratengen er ferdig når den har fått litt farge på toppen.

Server som en selvstendig rett sammen med en frisk salat, eller bruk den som tilbehør.

Er ikke sikker på om jeg forstår oppskriften din helt. Du presser ut så mye vann som mulig av squash’en, men heller så tilbake 2,5 dl … Er dette korrekt?

Det stemmer, væsken fra squashen er det «vannet» risen kokes i.
