Vi har snart tilbakelagt tre uker på planteary health diet, og nå er det innspurten det dreier seg om.  Nå er det bare en uke og noen få dager så er utfordringen fullført. Nedenfor har jeg laget en ukemeny basert på retningslinjene fra EAT-Lancet rapporten. De sier lite kjøtt, fisk og fjærkre men desto mer grønnsaker, linser og bønner. Det er kanskje ikke så mye linser og bønner i menyen nedenfor, men av en eller annen grunn finner jeg det lettere å få spist det til lunsj. Grønnsaker, hummus og litt grovbrød er en favoritt. Det smaker skikkelig godt er er lett å ta med seg i matpakken.

Uansett om du er på denne dietten, eller bare ønsker å spise noe god mat, håper jeg at du finner noe nedenfor som kan friste i uken som kommer. Ha en strålende uke, og vel bekomme!
