Etter en lang søndagstur, er noe av det deiligste jeg vet å sette meg til bords med en kraftig kjøttgryte. En gryte er perfekt søndagsmat. Det er raskt å lage, noe kutting, ellers passer maten stort sett seg selv. Dessuten smaker det alltid godt og fransk lammegryte er ikke noe unntak.

Denne varianten er en nokså klassisk fransk gryte med lam. Opprinnelig hadde jeg tenkt å bruke en boks hermetiske tomater, men så hadde jeg glemt å kjøpe det. Derfor ble det litt tomatpuré og noen ferske tomater i stedet. Det er like godt., men det er altså litt hipp som happ hva du bruker. Gryten skal uansett koke så lenge at det ikke blir den store forskjellen.

Porsjonen er til 4 veldig sultne voksne eller 6 personer. Eventuelt er denne gryten god å fryse med, så har man et deilig måltid til en senere anledning.

Ingredienser

  • 1,2 kg lammekjøtt, f.eks. bok
  • olje til steking
  • 2 gulrøtter
  • 1 liten aubergine
  • 10-12 sjalottløk
  • 2 fedd hvitløk
  • 2 ss tomatpuré
  • 1 ts tørket rosmarin
  • 1 laurbærblad
  • 4 grovhakkede tomater
  • 3 dl kjøttbuljong
  • 2 dl rødvin
  • 2 ts sukker
  • 2 ts rødvinseddik
  • 1 boks store hvite bønner

Fremgangsmåte

  • Brun kjøttet på alle sider i en jerngryte, gjerne i flere omganger slik at alt blir pent brunt.
  • Ta kjøttet ut av gryten og kok ut pannen.
  • Ta vare på stekesjyen.
  • Ha litt mer olje i pannen og fres grønnsakene i et par minutter.
  • Tilsett tomatpuré og krydder og fres videre.
  • Ha kjøttet tilbake i gryten og hell over buljong, stekekraft og vin. Ha i laurbærbladet og la det koke i 1,5-2 timer til kjøttet er mørt og løsner fra benet.
  • Smak til med sukker og eddik.
  • Hell laken av bønnene og skyll godt. Tilsett bønnene mot slutten av koketiden. De behøver ikke å koke med, de skal bare bli varme.

Server rykende varm med kokte poteter eller potetstappe og aspargesbønner.
