Det er ikke mange ting som slår dampete blåskjell, når det gjelder å skape sommerstemning. Men blåskjell er godt hele året. Faktisk er de best i de kalde månedene. Og siden blåskjell er både godt, sunt og billig er de rene kindereggene. De er dessuten raske å tilberede og dermed perfekt hverdagsmat.

Blåskjell minner meg dessuten om min studietid i Belgia. Der er jo moules frittes nasjonalretten og en av de billigere rettene ute på restaurant, så det var et naturlig valg mange ganger. Som nordmann var jeg jo nokså vant til å spise blåskjell, og overraskelsen var nokså stor da jeg bestilte dette første gang og fikk en bolle med blåskjell fulgt av en skål med pommes frittes. Men hvor var brødet til å suge opp all den deilige kraften med? Friterte poteter gjør jo ikke helt samme nytten.  Gaffel var det heller ikke. Etter en titt på nabobordet forsto jeg at det første blåskjellet skulle fungere som klype for de neste. Et blåskjell fungerte også som skje for å spise kraften til slutt. Pommes frittesene med majones var forresten utmerket følge.

Ingredienser

  • 2 kg (nett) blåskjell
  • 1/2 gul løk
  • 3 fedd hvitløk
  • 1/2 fennikel
  • olje til steking
  • 2 dl hvitvin
  • rikelig med persille
  • friskkvernet pepper
  • Finhakket persille og fennikelgress

Fremgangsmåte

  • Rens blåskjellene. De som ikke er lukket, eller lukker seg når de kakkes mot kjøkkenbenken må kastes.
  • Finahakk løk, hvitløk og fennikel.
  • Varm opp oljen i en gryte og løk, hvitløk og fennikel blankes.
  • Tilsett blåskjellene og hell vinen over.
  • Legg på lokk og la det dampe til  blåskjellene har åpnet seg.
  • Dra gryten til side og dryss over finhakkede urter og kvern over pepper.

Server på den belgiske metoden med pommes frittes til eller gå for den norske med loff og smør. Begge deler passer utmerket.
