Nå har høsten definitivt kommet til Oslo, og kveldene er kalde selv om dagene er milde. Da er det er herlig å kunne reise til andre steder uten å forlate kjøkkenet. Middagen denne lørdagen var som skapt for å transportere oss til en fransk bistro. Biff med hjemmelaget bearnaise og pommes frittes, mmm. Rødrutete duk og røde stoffservietter bidro ytterligere til den Parisiske bistroatmosfæren.

Denne maten er en skikkelig klassiker, og ikke uten grunn. En saftig biff, med en litt syrlig bernaise og sprøe pommes frittes, bare tanken får tennene mine til å løpe i vann.  Jeg har tidligere skrevet en post om hvordan man skal steke biffen. Bearnaise har vi, eller rettere sagt, Husbond laget et par ganger tidligere, Pommes frittes derimot er et ubeskrevet blad på kjøkkenet vårt. Inntil i kveld, altså.

Det er lenge siden jeg snappet opp at hemligheten bak gode pommes frittes er å dobbeltfritere dem. En gang ved en forholdsvis lav temperatur for at de skal bli gjennomkokte og så en gang til ved høyere temperatur for at de skal bli sprøde utenpå. Stekes de bare en gang ved lav temperatur blir de ikke spøre utenpå og får en dvask lysegul farge, og stekes de kun ved høy temperatur blir de spør og gylden utenpå, men rå i inni. To ganger skal altså være hemmeligheten.

Noen frityrgryte har jeg ikke, og ikke termometer som går opp til over 200 grader heller. Derfor ble friteringen litt improvisert og temperaturene ikke helt optimale. Sluttresultatet mitt ble gjennomstekte pommes frittes med fin gylden farge, men ikke supersprøe. Jeg tror det skyldes varmen, så neste gang jeg skal lage det skal jeg sørge for å ha et termometer.

Ingredienser

  • 600 gr store faste poteter
  • 1 liter olje som tåler høy temperatur
  • salt

Fremgangsmåte

  • Skrell potetene og skjær dem i ca. 1 cm tykke skiver på langs. Skjær skivene i 1 cm tykke staver.
  • Legg stavene i kaldt vann en stund.
  • Ta potetstavene opp og tørk dem grundig i et kjøkkenhåndkle.
  • Varm opp oljen i en gryte til den er 175 grader varm.
  • Stek potetstavene i porsjoner slik at oljen ikke blir for mye nedkjølt.
  • Stek i ca. 5 minutter.
  • Ta opp og legg potetstavene på et kjøkkenpapir slik at de får renne fra seg. Stek resten av potetstavene i porsjoner til alt er stekt.
  • Så langt kan det gjøres klart på forhånd.
  • Rett før servering økes temperaturen i gryten til 200 grader.
  • Stek potetstavene en gang til i ca. 1/2 til 1 minutt, fortsatt i porsjoner.
  • Ta pommes frittesene opp og la dem få dryppe litt av seg.

Dryss med salt og server straks sammen med biff, bearnaise og kokte aspargesbønner.
