La meg bare si det med en gang. Hjemmelaget bearnaise er kjempegodt, men absolutt ikke den enkleste sak i verden å slenge sammen. Hjemme hos oss er det Husbond som tar seg av sauser som innebærer sammenpisking av rå eggeplommer og fett.

Hemmeligheten med å få til en vellykket bearnaise saus er å klare å kontrollere varmen. Dessuten krever det en del pisking for å sikre at eggeplommene og smøret emulgerer (blir helt blandet).

Ingredienser

  • 1/2 dl hvitvinseddik
  • 1/2 dl tørr hvitvin
  • 1 ts tørket estragon
  • 1 ss finhakket sjalottløk
  • --
  • 3 eggeplommer
  • 2 ss kaldt smør
  • 200 gr. smeltet smør
  • salt og pepper
  • 1/2 ts tørket estragon eller 1 ts finhakket frisk estragon

Fremgangsmåte

  • Ha eddik, hvitvin, estragon og sjalottløk i en liten kasserolle og kok inn til det bare er et par spiseskjeer med væske igjen. Pass på det går fort.
  • Sil væsken og sett den til avkjøling.
  • Smelt de 200 gr. smør.
  • Pisk eggeplommene i en bolle til de er seige og tilsett den innkokte vinblandingen.
  • Hold bollen med eggeplommene over varmt vannbad, men pass for all del på at de ikke koagulerer, for da har du eggerøre og må begynne på nytt.
  • Ta eggeplommene av varmen og rør inn 1 ss kald smør.
  • Sett bollen med eggplommene og smøret tilbake over vannbadet og rør inn den andre skjeen med kaldt smør.
  • Begynn så å røre inn det smeltede smøret først dråpevis og etter hvert i en tynn stråle mens du rører hele tiden.
  • Pass hele tiden på at det ikke blir for varmt.
  • Regulert varmen med å ta bollen av vannbadet. Alternativt kan du ha en stor bolle iskaldt vann stående ved siden av som du raskt dypper bollen oppi dersom det blir for varmt.
  • Når alt smøret er rørt inn, tas sausen av varmen og smakes til med salt pepper og estragon.
  • Sausen kan holdes varm ved å sette hele bollen i et vannbad som holder ca. 50 grader.
  • Sausen må for all del ikke koke. Da skiller den seg.

 

Tips

Ett problem med å lage bearnaise er at den kan bli for løs, dersom det smeltede smøret blir tilsatt for fort. Sausen kan da reddes ved å ta en teskje vineddik i en ny bolle og piske inn en teskje av sausen. Fortsett å tilsette sausen i små porsjoner i den nye bollen. Dette redder sausen. Det vet jeg, for det skjedde nemlig med oss.
