Er ditt forhold til kebab, noe du spiser sent på natten etter en hyggelig tur på byen, og det er da noe litt slapt grillet kjøtt med dvask salat og en ikke helt topp dressing? Da må du revurdere din oppfatning, for disse små ‘babene er noe absolutt helt annet. Disse små kebabene er laget med lammekjøttdeig og er krydret med deilig, varme krydder som spisskummen, koriander, chili og revet sitronskall. Lammekebab serverer jeg sammen med salat, en sval yoghurtsaus smakssatt med dill, hvitløk og sitron og et arabisk flatbrød som kalles libabrød.

Har du ikke prøvd dette brødet før? Det er et stort flatt brød som kan brukes til så mangt. Det kan brukes til å pakke inn kjøtt og grønnsaker som her, eller all mulig annen mat. Det kan også brukes som pizzabunn. Gjør du det har du en ferdig pizza på null komma svisj. Dette brødet får du tak i i mange invandrerbutikker som selger mat fra Midtøsten. Får du ikke tak i det, kan du fint bruke pitabrød eller også store lomper.

Jeg har stekt disse lammekebabene i stekepanne på ovnen, men de er også super å ta på grillen. Uansett tar det ikke lang tid å steke dem ferdig. Det går også fint å lage dem i god tid på forhånd. Så du kan godt lage dem dagen i forveien og bare oppbevare dem i kjøleskapet. Faktisk vil smakene da få bedre tid til å sette seg, og du skal ikke se bort fra at resultatet blir enda bedre.

Nå som det er lammesesong, er det god tilgang på lammekjøttdeig, så da er det jo bare å sette i gang og lage lammekebab, da 😉

Ingredienser

  • 400 gr lammekjøttdeig
  • 1 liten løk, fint revet/hakket
  • 1 ts spisskummen
  • 1 ts malt korianer
  • 1/2 ts salt
  • 1/2 ts chiliflakes
  • nykvernet pepper
  • 1 sitron, skallet fint revet
  • olje eller margarin til steking
  • 12 små grillspyd
  • ---
  • 2 dl yoghurt
  • 1 liten bunt dill, finhakket
  • 1 fedd hvitløk, finhakket
  • 1/4 ts salt
  • nykvernet pepper
  • 2 ts olivenolje
  • 1/2 sitron, saften

Fremgangsmåte

  • Begynn gjerne med å lage yoghurtdressingen, slik at alle smakene får satt seg. Bland alle ingrediensene i en bolle og sett til side.
  • Bland alle ingrediensene godt sammen slik at du får en seig masse.
  • Del kjøttblandingen i seks like store deler og form avlange pølser.
  • Træ hver av disse på to grillspyd. Så langt som dette kan du forberede i god tid.
  • Stek spydene på middels høy varme til de er pent brune på alle sider og har blitt stekt helt gjennom. Dette burde ikke ta mer enn 8-10 minutter.

Server spydene sammen med yoghurtdressingen, salat og pitabrød, libabrød eller lomper.

Tips

Du kan også grille disse kebabene. Da bør du legge de små spydene i vann i minst 1/2 time først, eller bruke metallspyd.
