Til julen hører småkaker. Det er sikkert og visst, og ikke et vondt ord om tørre småkaker som serinakaker og fattigmann, men av og til blir de nettopp litt tørre. Og da er det greit med noen alternativer. Her kommer noen deilige fylte sjokoladekjeks som appelsinkrem inni. De hører ikke til den eksklusive «sju-slag-klubben», men de er julete nok for meg. Med smak av sjokolade og appelisn, er de en kjærkommen variant på kakebordet sammen med fruktfatet og godteriene.

I det siste har jeg snakket med flere som har planer om å spise julekakene sine før jul, og det er jo utvilsomt noe i det. Julekakene smaker jo langt bedre tidlig i desember, mens man fremdeles har litt plass i magen og fortsatt gleder seg til jul. I januar er mange grepet av en bondeanger og holder seg til grønnkål og kokt torsk i et desperat forsøk på å bli kvitt alt man fikk i seg i julen. Så kanskje det ikke er så dumt å kaste seg over julekakene mens de frister mest.

Ingredienser

  • 100 g mykt smør
  • 100 g sukker
  • 1 lite egg
  • 1/2 ts vaniljesukker
  • 1/2 ts natron 
  • 3 ss kakao
  • 150 g hvetemel
  • --
  • 100 gr mykt smør
  • 250 gr melis
  • skallet fra 1 appelsin
  • 3 ss appelsinjuice

Fremgangsmåte

Oppskriften gir ca. 20 kaker

  • Pisk sukker og smør hvitt.
  • Rør inn ett egg.
  • Bland alle de tørre ingrediensene og rør inn i deigen.
  • Kna deigen godt sammen. Den skal ikke være klissete, så om deigen er det, tilsettes mer mel.
  • La deigen hvile i kjølekapet i minst en time.
  • Sett ovnen på 175 grader.
  • Trill deigen ut i en leiv som er 3 - 5 mm tykk. Ha leiven over på et bakepapir og trykk ut rundinger med et glass eller pepperkakeform. Stikk ut et mønster i midten av halvparten. Jeg brukte en liten pepperkakestjerneform.
  • Stek kakene på nederste rille i 9-10 minutter.
  • Ta ut og avkjøl på en rist.
  • Rør alle ingrediensene til smørkremen sammen til en lett krem. Smør krem på de hele kakene og legg en utstanset kake oppå og klem sammen.

Oppbevar kakene i en boks i kjøleskapet, eller evt. spis dem med det samme. Vel bekomme og god førjulstid.
