Nå har vi kost oss et par dager med ribbe. Nystekt ribbe på julaften, med sprø svor og alt tilbehør man kan tenke seg. Som tradisjonen tilsier lagde jeg litt ekstra for å ha utover i julen. Og selv om vi har spist kald ribbe i et par dager er det fortsatt litt igjen. Jeg tipper at jeg ikke er den eneste som gjør det sånn. Men det går fint an å bruke ribberestene til noe annet og spennende. Her har jeg laget ramen med ribbe – en asiatisk inspirert suppe med nudler, pak choi og egg.

Har du ikke lyst på suppe, kan du kanskje prøve deg på å lage Peking gris. Det er en variant av Peking and, bare med ribberester i stedet for andekjøtt. Eller hva med soyaglasserte ribbebiter til et tapasbord. Eller du kan lage ribberillette. Det er et nydelig klassisk fransk pålegg, og med ferdig stekt ribbe er det ikke vanskelig å lage det heller.

Til å lage ramen brukes normalt hvetenudler, men det går fint å bruke andre slags nudler også. Jeg har brukt noen litt brede risnudler. Det går også bra. Som med all restemat, gjelder det at man tager hva man haver. Er det noe du ikke har, kan du bare erstatte med noe annet du har. Suppen blir uansett god og poenget er jo å bruke opp det man har.

Ingredienser

  • 6 dl kjøttbuljong/kraft
  • 1 stjerneanis
  • 3 cm ingefær i skiver
  • 2 hvitløkfedd
  • 2 ss soyasaus
  • 200 gr ferdig kokte nudler
  • 1 pak choi
  • ribbe
  • 1 kokt egg
  • grønn chili
  • sesamolje

Fremgangsmåte

  • Kok nudlene som beskrevet på pakken, og kok egget i 7 minutter.
  • Kok opp kraften og tilsett krydderet og soyasausen og la det koke i 5 minutter.
  • Imens, skjær ribben i biter, chilien i tynne skiver og del pak chioen i to.
  • Legg ribbebitene og pak chien i kraften og la den koke et par minutter.
  • Legg nudlene i suppeboller og hell over kraften. Legg egg, pak choi og ribbebiter på toppen og dryss over litt chili.

Server rykende varm med et par dråper sesamolje på toppen.
