Pin

Lammerull er en av mine absolutte favoritter hva julepålegg angår. Da jeg var barn var det min mormor som lagde rullen og hadde med seg til oss.  Men nå er det altså blitt de neste generasjonene sin tur til å fortsette denne familietradisjonen.

Lammerullen er krydert med ingefær og pepper, og saltlaken gjør den akkurat passe salt. Nå gleder jeg meg bare til å kose meg med dette pålegge til julens frokoster og lunsjer.

Ingredienser

  • 1 side av lam
  • ca. 1 kg lammebog
  • 1,5 ss salt
  • 1 ts sukker
  • 1 ts pepper
  • 1 ts malt ingefær
  • 3 ts gelatinpulver
  • 1 sjalottløk, finhakket

Fremgangsmåte

  • Skjær til lammesiden slik at den blir et rektangel.
  • Skjær lammebogen i terningen på ca. 1x1 cm biter.
  • Bland alle krydderne.
  • Legg lammesiden på benken med kjøttsiden opp.
  • Gni litt av krydderblandingen inn i kjøttet.
  • Legg stykkene av lammebog oppå og dryss med løk og resten av krydderblandingn.
  • Rull godt sammen og sy igjen rullen med hvit kjøkkenhyssing.
  • Nå kan rullen fryses, eller den kan kokes.
  • Legg rullen i en slakterstrømpe, eller surr den stramt.
  • Kok opp saltlake, 1,5 ss salt pr. liter vann.
  • La rullen trekke rett under kokepunktet i 1,5 til 2 timer.
  • Avkjøl rullen i kokelaken.
