I min serie med forslag til måter å bruke opp julmaten på, har jeg kommet til ribberillette. Rillette er en klassisk fransk rett som naturlig hører hjemme på et lunsjbord. Tradisjonelt lages den av fett svinekjøtt som kokes i sitt eget fett sammen med litt urter og vin. Så kjøres kjøttet sammen med fettet til en fluffy postei som kan smøres på brødskiver eller kjeks. Ribberillett lages av allerede stekt ribbe, ellers er fremgangsmåte den samme.

Ribberillette smaker nydelig på en skive grovbrød og gjerne med små cornichon, sylteagurk eller syltede rødbeter. Det går også fint å lage små canapeer som kan stå på et koldtbord, eller være et lite tiltygg til en velkomstdrink med bobler.

Et lite norgesglass med ribberillett er også en super vertinnegave i romjulen.
