Rødkål er et tradisjonelt tilbehør til mange retter som skinkestek, ribbe og and. I Danmark brukes den også på enkelte smørbrød. Hjemme hos oss har vi stort sett hatt surkål, men i de siste årene har jeg og til satt rødkål  på bordet i stedet. Det er jo ikke til å nekte at rødkålen tar seg bedre ut på tallerkenen enn sin bleke slektning. Denne varianten er smaksatt med fiken, solbærsaft og appelsin. Det gir ekstra sødme og litt syre også som er med på å gjøre smaken litt mer spennende.

Det er slett ikke vanskelig å lage rødkål. Det tar heller ikke spesielt lang tid. Har du en mandolin er det også en lek å snitte opp kålen. Dersom du ikke har en mandolin, anbefaler jeg deg å tenke seriøst på å skaffe deg en, for det gjør mange skjærejobber mye enklere. En advarsel er imidlertid på sin plass. Vær forsiktig i din omgang med mandolin. En av de første gangene jeg brukte den havnet jeg på legevakten med en halvt avkuttet tommelfinger. Den lot seg heldigvis sy på igjen, så det var ikke så farlig. Men altså, vær forsiktig og bruk evt. en sikkerhetshanske om nødvendig.

Ingredienser

  • 800 gr rødkål
  • 1 rødløk
  • 5 fiken
  • saften fra 1 appelsin
  • 1 dl balsamicoeddik
  • 4 dl vann
  • 1 ss sukker
  • 1 dl solbærsaft
  • salt og pepper

Fremgangsmåte

  • Begynn med å finsnitte kål og løk og skjær fikenen i tynne strimler.
  • Ha kål, løk, fiken, eddik, appelsinsaft og vann i en kjele. Det ser veldig mye ut, men det synker en del sammen under koking.
  • Kok opp og la det koke ca. en time.
  • Rør en gang i mellom slik at alt blir godt blandet.
  • Smak til for å undersøke om det trengs mer sødme eller syre.
  • Tilsett solbærsaften og la kålen koke noen minutter til.

Server rykende varm til for eksempel skinkestek eller  medisterkaker
