Når høstmørket senker seg, er det sesong for skinkestek. Det er jo uhorvelig mange griser som skal slaktes fra nå og frem til jul for at alle som ønsker det skal få ribbe til jul, og siden det er mye mer kjøtt på grisene enn ribben, blir det mye svinekjøtt som skal produseres og selges. Og dermed kommer blant annet skinkesteken inn i bildet. Men uansett, skinkestek er jo kjempegodt – og en skikkelig søndagsmiddag på en kald og gusten dag som i dag. Ganske lettvint mat er det også, særlig om du kjøper ferdig surret stek. Steken klarer seg jo fint på egen hånd i ovnen. Velger man tradisjonelt tilbehør som kokte poteter, surkål og brun saus er det minimal innsats egentlig som skal til for å ha en deilig middag på bordet. Det viktigste hjelpemiddelet er etter min mening steketermometeret. Med det har man full kontroll på det endelige resultatet.

Ingredienser

  • 1 kg skinkestek
  • salt og pepper
  • 1 gulrot
  • 1/2 gul løk
  • vann
  • 1 ss bruning
  • 1 ts sennep
  • (evt. sukkerkulør)

Fremgangsmåte

  • Begynn med å sette ovnen på 180 grader.
  • Salt og pepre steken godt og brun den på alle sider i en stekepanne.
  • Legg den deretter i en ildfast form med gulrotbiter og løkbåter rundt.
  • Kok ut stekepannen og hell kokevannet i formen.
  • Stikk inn steketermometer. Sett steken i ovnen og stek til den er 64 grader.
  • Ta steken ut og la den hvile i 15 minutter.
  • Imens steken hviler, sil stekekraften over i en kjele og kok opp. Rør inn bruning og la det koke noen minutter. Smak sause til med sennep. Tilsett et par dråper sukkerkulør dersom du ønsker at sausen skal ha en litt mørkere farge.

Skjær opp kjøttet og server med kokte poteter og grønnsaker eller surkål til.
