Ingefærkjeks smaker skikkelig av jul og er et fint tilskudd til de tradisjonell julekakene. De smaker deilig krydret, litt ala pepperkaker, men med en mer tydelig ingefærsmak. De er lettvinte å lage, og fine å ha på lur.

Oppskriften har jeg funnet hos den amerikanske pariseren David Lebovitz. I den opprinnelige oppskriften skal det være melasse i deigen, men det hadde ikke jeg, så jeg brukte sirup i stedet. Dessuten la jeg til litt frisk revet ingefær for å få en mer intens ingefærsmak. Du kan også hakke opp litt kandisert ingefær dersom du har det.

Disse kjeksene lages på den måten at deigen rulles til en pølse og så skjærs den i skiver som stekes. Denne måten liker jeg å lage småkaker på. Da synes jeg det er mye lettere å få omtrent samme størrelse på kjeksene sammenlignet med de oppskriftene der kakene rulles ut som små kuler.

Ingredienser

  • 280 gr hvetemel
  • 1 1/2 ts natron
  • 1/2 ts salt
  • 1 ts kanel
  • 1 1/2 ts malt ingefær
  • 1/2 ts malt sort pepper
  • 150 gr romtemperert smør
  • 130 gr sukker
  • 1 1/2 ts revet fersk ingefær
  • 80 gr lys sirup
  • 1 stort egg
  • perlesukker

Fremgangsmåte

Denne oppskriften gir ca. 32 stk.

  • Bland mel og krydder i en bolle.
  • I en annen bolle, pisk smør og sukker luftig.
  • Rør inn sirup, egg og fersk ingefær.
  • Bland inn de tørre ingrediensene. og rør til det er en jevn deig.
  • Del deigen i to og rull ut til jevne pølser som er ca. 5 cm i diameter.
  • Pakk hver pølse inn i plastfolie og legg i kjøleskapet i minst 30 min.
  • Sett ovnen på 180 grader.
  • Skjær pølsene i en knapp cm. tykke skiver.
  • Hell perlesukker på en tallerken og press den ene siden av kjeksene ned i sukkeret.
  • Legg på stekebrett med god avstand, da de siger ut ved steking.
  • Stek i 10-12 minutter midt i ovnen.
  • Ta ut og avkjøl på rist. Oppbevares i kakeboks.

Tips

Det går fint an å fryse ned deigpølsene, slik at de kan tas frem og stekes ved behov. På den måten vil du få helt ferske kjeks på et blunk.
