Pin

For meg og sikkert mange andre er gløgg den ultimative varme juledrikken. Ofte får man servert tomtegløgg fra super’n, men aller best synes jeg det er med hjemmelaget gløgg. Den smaker og lukter deilig av alle julens krydder som ingefær, nellik, kanel og stjerneanis.

Gløggen lager jeg ved å koke opp sukker og krydder og la krydderet trekke i sukkerlaken helt til laken er kald. Da siler jeg den og står igjen med en gløggessens som enten kan blandes med solbærsaft eller rødvin som varmes forsiktig opp. Ved å lage gløggen på denne måten, får krydderene ligge mye lenger å trekke enn dersom de bare has direkte oppi rødvin i en gryte. Til sukkerlaken bruker jeg brunt sukker. Det gir en ekstra kryddersmak og dybde i smaksbildet. Jeg ser at mange vil lage «hvit gløgg» av eplejuice. Man kan da bruke samme fremgangsmåte, men da ville jeg brukt vanlig sukker slik at gløggessensen blir blank og ikke brun.

Når jeg først er i gang med å lage gløggessens, lager jeg like gjerne en stor porsjon, så har jeg litt på lur om det skulle komme noen innom. Oppskriften nedenfor rekker til ca. 4 flasker vin.

Ingredienser

  • 1 liter vann
  • 1/2 liter brunt sukker
  • 2 kanelstenger
  • 4 stjerneanis
  • 1 stykke ingefær
  • 1 appelsin, saft og skall
  • 15 grønne kardemommekapsler
  • 15 nellikspiker
  • --
  • Hakkede mandler
  • Rosiner

Fremgangsmåte

Oppskriften rekker til ca. 4 flasker rødvin

  • Kok opp vann og sukker.
  • Skrell det gule skallet av en appelsin og press ut saften. Ha saft og skall i sukkerlaken og alle krydderene og la det trekke i ca. 15 minutter.
  • Dersom du ikke skal bruke det med en gang, avkjøl med alle krydderene i og sil over i en helt ren flaske.
  • Dersom gløggen skal brukes med en gang, så sil ca. 1/4 over i en kasserolle sammen med i flaske vin og varm forsiktig opp.
  • Smak gjerne på gløggen og juster evt. med mer sukker dersom du liker en veldig søt gløgg.

Server i pene glass med rosiner og hakkede mandler.

 

Tips

Det som ikke brukes med en gang oppbevares kjørlig på lufttett flaske.

Dette skal jeg prøve 🙂 Men hvor mye ingefær er et stykke? Er det en hel ingefær man får kjøpt i matbutikken, eller er det kun en passende bit av denne?

Hei Eva, jeg brukte et stykke som veide 30-40 gram. Det var vel ca. 8 cm langt og 3 cm i diameter. Det bare skurbbet jeg og delte opp i 5-6 biter. Lykke til og god jul.

Er en skam å si att dette er «Gløgg» hvordan kan vann og brunt sukker bli gløgg!? gløgg er lagd på vin, det er bare å sjekke opp hvordan man opprinnelig lager dene gode drikke! ta en tur på nettet

Hei, meningen er jo å lage en krydderessens som blandes i vinen. Ved å trekke kryddrene i sukkrelaken, får jeg frem kryddersmaken mye bedre. Vinen kan jo ikke varmes opp så lenge, for da fordamper jo all alkoholen og resultatet er at kryddersmaken kan bli nokså slapp – etter min mening. Om du vil kalle det gløgg eller ei, får jo være opp til deg.

Ja, jeg bruker fersk ingefær. Vet ikke helt hvordan det ville blitt med hel tørket ingefær, men antar at det skulle gå bra det også.
