Nå i førjulstiden går det mye i foreberedelser til julen. Her om dagen stekte jeg medisterkaker til julemiddagen, og heldigvis ble det noen til overs. For i dag var jeg sylta forkjølet og måtte holde meg hjemme fra jobben. Jeg hadde lyst på noe som smakte skikkelig mye og godt, men hadde ikke ork til noe særlig.  Da ble et par medisterkaker redningen. Med litt dansk rugbrød, rødløk, rødkål og litt sennep hadde jeg en god, varm og ikke minst lettvint lunch på et blunk, nemlig et skikkelig julesmørbrød. I god dansk tradisjon er det mye pålegg og lite brød i disse smørbrødene – det er best slik synes jeg.

I julen blir det også mange matrester. Dette er en ypperlig måte å spise opp den deilige maten. Legg den rett og slett på en skive brød og nyt, medisterkaker, eller pøler, ribbe eller skinkestek. Bruk også surkål, rødkål eller stek potetene ved siden av og du har et lite luksusmåltid på null komma niks.

Ingredienser

  • 2 medisterkaker
  • 4 ss rødkål
  • 1/4 rødløk i tynne strimler
  • 2 ts sennep 

Fremgangsmåte

  • Skjær skiven i to og smør med sennep.
  • Varm opp rødkålen og legg den på brødet.
  • Legg på litt rødløkstrimler og varme medisterkaker. Pynt gjerne med litt friske urter som timian eller rosmarin.
