Kyllingleverpostei smaker utrolig godt og er en sofistikert liten rett som er langt enklere å lage enn resultatet gir inntrykk av. Den får en fløyelsmyk konsistens, men har fortsatt masse smak og karakter. Kyllingleverposteien passer ypperlig på koldtbordet, men er like fin som en liten munnfull til aperitiffen eller en superraffinert forrett.

På buffeten kan du sette den frem sammen med noen cornichoner, sølvløk eller syltet rødløk og selvfølgelig godt brød. Jeg synes det smaker ekstra godt med litt mørkt surdeigsbrød eller pumpenikkel.

Dersom du vil servere kyllingleverposteien ved siden av aperitiffen, kan du lage små kanapeer. Du kan også rett og slett sette hele skålen frem sammen med brød og la gjestene forsyne seg selv. Dette kan være hyggelig dersom selskapet ikke er for stort og av den mer uformelle arten.

Til forrett kan posteien skjæres i tynne skiver og anrettes på et stykke loff eller brød på et salatblad og kanskje litt karse og syltet rødløk på toppen.

Ingredienser

  • ca. 400 gr kyllinglever (1 pk)
  • 1 ss smør
  • 1 sjalottløk
  • 2 ss friske urter hakket (salvie, timian, rosmarin)
  • 3 ss cognac
  • 3 ss creme fraiche
  • 100 gr mykt smør
  • 1 ss grønn madagascarpepper (hermetisk)
  • aspikk
  • laurbærblad

Fremgangsmåte

  • Rens leveren for sener
  • Smelt smøret i en stekepanne og stek leveren til den er gjennomstekt
  • Ha oppi finhakket sjalottløk og urter og la det surre et par minutter
  • Hell over cognac og tenn på, la det brenne til flammen slukker av seg selv
  • Sett til side og avkjøl
  • Ha leverblandingen, smør og creme fraiche i en matmølle og kjør til det er en glatt masse
  • Ha oppi pepperen og kjør litt til
  • Fyll blandingen over i en form og glatt overflaten så mye som mulig
  • Lag aspikk etter anvisning på pakken og hell halvparten over posteien
  • Pynt med laurbærblader og la det stivne litt
  • Hell over resten av aspikken
