Pin

For mange er julemiddagen årets middag. Dette er kanskje den dagen hele familien samles rundt middagsbordet og alle er i sitt beste humør. I huset har det spredd seg en deilig duft av ribbe, pinnekjøtt eller noe annet godt. Men det er også et aldri så lite stressmoment. Blir ribba nok stekt og svoren spør i år? Er pinnekjøttet nok vannet ut? Er det OK å servere kjøpesurkål? Og er det greit å servere noe helt annet? Sprøsmåleene står i kø og er man av den litt nevrotiske sorten, kan opptakten til julemiddagen blir alt annet enn hyggelig. Her har jeg samlet noen tips og triks.

 

Ribbe

Å lage en god ribbe er ikke vanskelig, men prosessen tar sin tid.

21. desember: Har du frossen ribbe, er det best å ta den ut av fryseren nå. Legg den i kjøleskapet for langsom tining.
22. desember: Både frossen og fersk ribbe saltes og pepres nå godt. Ikke være gjerrig med krydderet. Legg den tilbake i kjøleskapet dekket med aluminiumsfolie. Der skal den stå frem til julaften morgen.
23. desember: Skrell gjerne potetene og legg dem klar i kjelen med kaldt vann. Lag gjerne tilbehøret i dag.
24. desember: Ta den da ut av kjøleskapet og sett dem på benken for temperering. Se hele ribbeoppskriften. Du kan også lage ribbe i kombidampovn.

Bruk de potetene du liker best, men det er lov å tenke praktisk også. Det er veldig greit å skrelle potetene på forhånd, men da bør de være kokefaste.

Det vanligste er vel å servere surkål til ribba. Det er flott å lage den selv, men også helt OK å kjøpe i butikken. Det gjør vi, for Tuppen og Lillemor liker best den kjøpte varianten. Kjøpesurkålen varmer jeg ganske enkelt opp ved å legge posen(e) oppå potetene de siste minuttene av koketiden. Mange liker å servere rødkål i stedet, og det samme kan sise om rødkål som om surkål. Noen serverer også rosenkål ved siden av. og skal du det, kan du jo prøve denne variantenå lage rosenkål med valnøtter. Sennep og tyttebærsyltetøy hører også med på bordet.

 

Pinnekjøtt

Dette er kanskje en av de enkleste julemiddagene.

23. desember: Legg pinnekjøttet i vann. Noen sier 36 timer før, andre 24 timer før. Les på pakken, eller gjør som du pleier. Skrell gjerne poteter og rens rotgrønnsaker og legg i vann.
24. desember: Pinnekjøttet kan gjerne dampes på formiddagen. Jeg gjør det og setter gryta ut til avkjøling etterpå (gjerne ut på terrassen). Da kan jeg nemlig ta av litt av fettet fra kraften.  Oppskrift på pinnekjøtt og pinnekjøtt i dampovn.

Kålrabistappe er et selvsagt tilbehør til pinnekjøttet.

 

Juletorsk

23. desember: Du kan gjerne rense og skjære opp gulrøtter og legge dem klar i kokevannet. Sausen kan du gjøre halvveis klar ved å koke inn fløten.
24. desember: Følg oppskriften og husk varme tallerkener.

 

Uansett ha du planlegger å spise og hvem du spiser med, ønsker jeg deg en riktig god jul.

Det er også dessverre en del mennesker som ikke har noen å feire med i julen. Heldig vis er det flere organisasjoner som gjør sitt for at også disse skal få oppleve en god jul. Støtt gjerne en av disse organisasjonene.
