Hvorfor ikke tenkte jeg. Da jeg kom hjem sjekket jeg min «Flavor bible», og ganske riktig, endiver og and er en ikke helt uvanlig kombinasjon.

Siden endiver er veldig bittert, ville jeg mildne litt av det med appelsin og brunt sukker. Den søtlig, bitre kombinasjonen fungerte bra mot det fete andekjøttet, men for barna ble den nok litt sær.

Ingredienser

  • 4 andelår
  • 4 ss salt
  • 2 kvister rosmarin
  • 5 fedd hvitløk
  • 1 liter andefett
  • --
  • 800 gr poteter
  • salt og pepper
  • 3 ss andefett

  • 2 ss andefett
  • salt og pepper
  • 1 dl appelsijuice

Fremgangsmåte

  • Begynn kvelden i forveien. Legg andelårene i et fat og dryss med salt og legg på 1 kvist rosmarin. Dekk med plast og sett i kjøleskapet natten over.
  • Neste dag. Ta andelårene ut av kjøleskapet og skyll grundig av saltet.
  • Klapp dem tørre og legg dem tett i en gryte.
  • Ha over andefettet resten av rosmarinen og hvitløksfedden.
  • La det trekke over svak varme i ca. 4 timer, eller til kjøttet er så mørt at det nesten faller av bena.
  • Skrell potetene og skjær dem i fire biter.
  • Kok dem i ca. 5 minutter. Hell av vannet og sett lokket på gryten igjen.
  • Rist kraftig på gryten noen ganger, slik at potetbitene blir litt lodne.
  • Ha dem over i et ildfast fat og hell over andefett og kryder med salt og pepper.
  • Stek i ca. 30 minutter til potetbitene er gjennomstekt og har fått en fin gylden stekeskorpe.
  • Server gjerne med kokte asparges eller aspargesbønner.
  • Rens endivene og del dem i fire.
  • Stek dem i litt andefett og brunt sukker.
  • Hell over appelsinsaften når endivene har begynt å ta litt farge. Ha alt over i et ildfast fat og bak dem sammen med potetene.
  • Like før servering settes ovnen på grill og grill andelårene slik at skinnet blir sprøtt.
