Krydret andebryst med plommer er en fest for ganen og en rett som egner seg ypperlig for gjestebud eller når du vil unne deg noe ekstra godt. I denne retten er det søtt, syrlig, krydret og fett i akkurat passe mengder. Krydderblandingen gir et hint av Kina uten at dette blir kinamat og plommene tilfører både sødme og litt syre.

Denne oppskriften lagde jeg første gangen for ganske nøyaktig ett år siden, da vi feiret Husbonds 40-års dag. Den er min variant av en oppskrift i Eyvind Hellstrøms sin kokebok «Bagateller». Men, mens det i hans oppskrift skal være fersken, bruker jeg plommer rett og slett fordi det ikke er så mange fersken i butikken på denne tiden av året. Importerte plommer er det imidlertid nok av.

Krydderblandingen er deilig aromatisk og passe eksotisk. Den inneholder, korianer, fenikkel, stjerneanis og pepper. I Hellstrøms oppskrift er det også sichuanpepper, men av samme årsak som at jeg bruker plommer istdet for fersken har jeg droppet sichuanpepperet – jeg fikk ikke tak i det. Alt krydderet er helt og males til et fint pulver. Dersom du har en krydderkvern er det flott, ellers så kan du bruke en morter. Det gjør jeg. Det tar litt tid, men jeg synes det er greit for duften som frigis etterhvert som krydderet blir knust gir stoff til å drømme seg bort og før jeg visste ordet av det var jeg ferdig. Men, selvfølgelig med en krydderkvern sparer man jo litt tid da… Dessuten, dersom du ikke orker å kverne krydderet selv på den ene eller andre måten, går det også an å bruke «five spice» krydder fra butikken.

Ingredienser

  • 2 andrebryst
  • 1 ts sort pepper
  • 1 ts fennikkelfrø
  • 1 ts korianderfrø
  • 2 nellikspiker
  • 1/2 kanelstang
  • 1/2 stjerneanis
  • 1 ts sukker
  • 1 dl vann
  • --
  • 8 røde plommer (store) eller 20 små
  • 2 ss brunt sukker
  • 2 ss vann
  • 1 ss sherryeddik
  • 1 ss balsamicoeddik

Fremgangsmåte

  • Begynn med å male alle krydderene og sukker helt fint.
  • Bruk gjerne krydderkvern om du har. Jeg har morter og maler i den.
  • Sil den ferdig malte krydderblandingen slik at du står igjen med et fint pulver.
  • Skjær fettet på andebrystet i små ruter. Pass på at du ikke skjærer i kjøttet, bare i fettet.
  • Gni alt krydderet inn på begge sider av andebrystene. La dem gjerne stå en halv time på kjøkkenbenken før de stekes.
  • Imens, del plommene i to og ta ut stenene.
  • Legg andebrystene med fettsiden ned i en varm stekepanne. Stek andebrydtene til fettet er blitt gyldent og sprøtt. Pass på å ikke ha for sterk varme, for da blir sukkeret i krydderblandingen brent og gir en svidd smak.
  • Snu andebrystet og stek det ved middels varme i ca. 15 minutter til det er rosa, men ikke gjennomstekt.
  • La kjøttet hvile. Hell fettet ut av pannen og kok ut pannen med vannet og ta vare på denne sjyen.
  • Smelt vann og sukker i en kasserolle til det er blitt lys karamell.
  • Ha i plommene og stek til de har blitt karamellisert.
  • Ta plommene ut av karamellen og hell i stekesjyen fra anden i karamellen.
  • Ha også i sherryeddik og balsamicoeddik og kok inn litt.
  • Hell over plommene.
  • Skjær andebrystene i skiver og anrett med plommer og stekesjy på tallerkner.
