En enkel hverdagsrett og samtidig en av verdens mest romantiske retter. Noen hver kan jo bli litt myk når de tenker på Lady og Landstrykerens uforglemmelige først måltid sammen, som besto av spagetti med kjøttboller..  Og hvordan Landstrykeren omsorgsfullt og forsiktig skyver den siste kjøttbollen over til Lady og ser hengivent  på henne, og hun blygt slår blikket ned men spiser kjøttbollen. Og selvfølgelig høydepunktet – kysset som oppstår når de velger hver sin ende av det samme spagettitråden.

Kraftfulle saker med andre ord, og kanskje noe å vurdere for den som planlegger å forføre med et måltid. Det vil jo ikke være lett å stå i mot en tallerken med spagetti og kjøttboller i deilig fyldig tomatsaus, kanskje et lite glass vin ved siden av og litt hyggelig musikk i bakgrunnen. Men dette er jo ikke bare kjærestemat, det er i høy grad hverdagsmat også. Det passer like godt for en familie på farten eller for den som skal spise alene. Det passer i hvert fall supert for små jenter på vei til skitrening en tirsdags ettermiddag.

Disse kjøttbollene er ikke av det mest avanserte slaget, men de er allikevel veldig velsmakende. Ingredienslisten kan se lang ut, men komplisert er det ikke. Den største jobben med denne retten er å steke kjøttbollene. Her finnes det flere strategier. Man kan velge å lage store kjøttboller. Da er det forholdsvis fort gjort å forme dem fordi det blir nokså få, men det tar desto lengre tid å koke dem ferdige. Dessuten blir det ikke så mange kjøttboller til hver. Så kan man selvsagt lage små kjøttboller. Da er jobben med å trille dem ut større, men det er lettere å steke dem jevnt brune og det går fortere å få dem gjennomkokt. Jeg liker å lage kjøtbollene på størrelse med store klinkekuler.

Ingredienser

  • 400 gr kjøttdeig
  • 3 ss brødsmuler
  • 3 ss melk
  • ½ ts salt
  • rikelig nykvernet pepper
  • 1 fedd hvitløk, revet fint
  • ½ liten løk revet grovt
  • 1 ss finhakket persille
  • 2 ts tørket oregano
  • --
  • ½ liten løk
  • 2 fedd hvitløk
  • 1 boks hakkede tomater
  • 1 ts timian
  • ½ ts salt
  • nykvernet pepper
  • ¼ tørket chili knust
  • frisk basilikum eller persille
  • --
  • Spagetti til 4 personer

Fremgangsmåte

  • Begynn med tomatsausen. Finhakk løken og hvitløken og fres det i litt olivenolje.
  • Tilsett tomatene og alt krydder unntatt basilikum.
  • La det småputre på platen mens kjøttbollene lages.
  • Bland brødsmulene og melk og la det stå til brødsmulene har trukket til seg melken. Ha kjøttdeigen i en bolle og rør inn salt, pepper, hvitløk, løk, brødsmulene og urtene. Bland alt godt og la det gjerne stå i 10-15 minutter slik at smakene får satt seg litt. Lengre tid er bedre, men det har jeg som regel ikke om ettermiddagen.
  • Varm litt olje i en stekepanne og form kjøttdeigen til små  kjøttboller på størrelse med store klinkekuler og stek til de har blitt pent brune rundt hele.
  • Kok spagetti etter anvisning på pakken. Ha kjøttbollene i sausen og la dem trekke til de er gjennomkokte. Strimle de friske urtene og ha over ved servering.
