I dag lagde jeg en deilig, frisk salat med and og appelsin. Denne kan serveres som en elegant lunsjrett, eller en lett middagsrett. Salaten er veldig enkel å lage, men det tar tid, fordi andelårene må stekes lenge – et par timer faktisk.

And oppfattes ofte som en eksklusiv råvare, men andelår er faktisk ganske rimelig. Det skyldes kanskje at endene først og fremst ales opp på grunn av andebrystene, og at lårene dermed blir et slags biprodukt? Ikke vet jeg, men de er i hvert fall smaksrike. Dessuten synes jeg det er noe tilfredsstillende å spise mer av fuglen enn bare brystene.

Appelsin og and smaker bare så utrolig godt sammen. Det er virkelig en av mine favorittkombinasjoner. Den friske, søte appelsinen er akkurat hva det fete andekjøttet trenger. Og samspillet i denne salaten fungerer nettopp sånn. I tillegg kommer knasende og frisk salat og sprø fenikkel sammen med en appelsinvinaigrette. Andelårene gned jeg inn med kinesisk five-spice-krydder før jeg satte dem inn i ovnen. Det passet bra til alle de andre smakene synes jeg.

I denne oppskriften har jeg brukt blodappelsiner. De er kanskje litt mindre søte enn vanlige appelsiner, noe jeg synes passer fint her. Den flotte rødfargen gjør seg jo også godt. Men får du ikke tak i blodappelsiner går det helt utmerket med vanlige appelsiner også, selvfølgelig.

Ingredienser

  • 2 andelår
  • salt og pepper
  • 2 ts kinesisk five spice (valgfritt)
  • 2 appelsiner
  • 1/2 romanosalat
  • 1/2 pakke ruccola
  • 1/2 fenikkel
  • 1 liten rødløk
  • 4 ss appelsinjuice
  • 2 ss olivenolje
  • salt og pepper

Fremgangsmåte

  • Sett ovnen på 150 grader.
  • Gni andelårene inn med salt, pepper og five spice krydder og stek lårene i 2 timer. Øs over fett et par tre ganger i løpet av stekingen. Dersom skinnet ikke har blitt sprøtt, kan du sette på grillelementet de siste minuttene. Men pass også på så det ikke blir brent.
  • Vask salaten og skjær den i strimler.
  • Skjær løken og fenikkelen i tynne skiver.
  • Skjær skallet av appelsinene og skjær ut filetene. Klem saften ut av restene og bruk til vinaigretten.
  • Riv andekjøttet i passelig store biter.
  • Anrett salat, grønnsaker, appelsin og andekjøttet på et serveringsfat.
  • Visp sammen appelsinsaften og olivenoljen og smak til med salt og pepper og hell over rett før servering.

Vel bekomme.

Tips

Andelårene kan godt stekes god tid i forveien. Kjøl da ned og oppbevar i kjøleskapet. Ta dem ut i god tid så de får romtemperatur ved servering.
