Det er midtsommer, og for mange er dette høysesong for å spise blåskjell. Kanskje er du så heldig at du bare kan gå ut og hente det du trenger, eller så får du gjøre som meg og sanke i nærmeste fiskedisk. Det er selvsagt ikke like sjarmerende, men da er jeg i hvert fall sikker på at de er trygge å spise.Plukker du selv må du forsikre deg om at de er trygge ved å se på Mattilsynets blåskjellvarsel på internett. Hjemme hos oss spiser vi som oftest  blåskjellene dampet i hvitvin smakssatt med hvitløk, løk og persille, eller blåskjell thaistyle, men i dag fikk jeg lyst til å lage en suppe. Uansett tilberedelsesmetode er blåskjell, lettvint, sunn og god sommermat.

Ingredienser

  • 1 lite purre
  • 1 gulrot
  • 1/2 fennikel
  • 2 fedd hvitløk
  • 1 ss smør
  • 3 stilker bladpersille
  • 2 dl hvitvin
  • 1 kg blåskjell
  • 5 dl helmelk
  • 3 dl kremfløte
  • 1 ts salt
  • evt 1/2 terning fiskebuljong

Fremgangsmåte

  • Begynn med å rense blåskjellene. Rens dem og kast de som ikke er lukket eller vil lukke seg etter et lite kakk i kjøkkenbenken. Sett til side.
  • Skjær det hvite og lysegrønne på purren i tynne strimler. Skjær gulroten i små terninger 0,5 x 0,5 cm og fennikelen i små terninger. Finhakk hvitløken.
  • Smelt smøret i en kjele og fres grønnsakene et par minutter. Tilsett hvitvinen, persillestilkene og blåskjellene og legg på lokk.
  • La blåskjellene dampe i ca. 4 minutter - til de har åpnet seg.
  • Plukk ut blåskjellene av gryten med en hullsleiv og legg dem i en bolle.
  • Tilsett melken og fløten i kraften og la det småkoke noen minutter. Smak suppen til med salt. Dersom smaken er litt tam, kan du tilsette en halv fiskebuljongterning.
  • Ta blåskjellene ut av skallene. Du kan evt. la noen beholde skallet til pynt ved servering.
  • Strimle persillen. Rett før servering has blåskjellene og evt. kraft som er i bollen i suppen. Varm opp.

Server med loff og godt smør. Vel bekomme.
