Jeg har en kokebok som heter «Sølvskjeen». Den skal visstnok være Italias svar på den rutete kokeboken og har etter sigende vært en bestselger i Italia i over 50 år. Den inneholder alle de klassiske italienske retter, og mange flere. Er du glad i italiensk mat, kan den absolutt anbefales. Et av de største kapitlene i boken omhandler grønnsaker, og en av de grønnsakene som er viet størst oppmerksomhet er auberginen. I boken bakes, stekes, grilles, brukes i stuinger og gryteretter og moses auberginen.

Retten jeg lagde i dag er hentet fra Sølvskjeen, men fordi jeg ikke fikk tak i ricotta, måtte jeg gjøre en liten tilpasning ved at jeg brukte en blanding av cottage cheese og creme fraiche i stedet. I den opprinnelige oppskriften er det også ansjos, det droppet jeg da jeg ville lage en helt vegetarisk versjon. Ellers er oppskriften stort sett akkurat som i boken. Uansett så ble resultatet deilige og mettende auberginer med silkemykt innhold og en liten sprø skorpe oppå.

Ingredienser

  • 50 gr tørket steinsopp
  • 4 små auberginer
  • 2 hvitløksfedd
  • 1 ss hakket bladpersille
  • 100 gr cottage cheese
  • 50 gr creme fraiche
  • 1 sammenpisket egg
  • 4 ss fint revet parmesan
  • 1/2 ts tørket oregano
  • salt og pepper

Fremgangsmåte

  • Legg soppen i en bolle og hell over kokende vann. La det stå i 30 minutter mens resten forberedes.
  • Sett ovnen på 180 grader.
  • Del auberginene på langs og hul dem ut med en liten skarp kniv og skje, men la det være igjen  ca. 1/2 cm auberginekjøtt på kanten.
  • Kok opp rikelig lettsaltet vann og kok aubergineskallene i 3-4 minutter. Ta dem opp med en hullsleiv og la dem dryppe av på et kjøkkenpapir.
  • Skjær innmaten i terninger og kok disse i det samme vannet i 2 minutter. Ta dem opp og klem ut vannet når de har blitt litt nedkjølt.
  • Kjør cottage chesese og creme fraiche glatt med stavmixer og tilsett oregano, parmesan, og egget.
  • Bland aubergineterningene (som nå har fått klemt ut vannet), hvitløk og persille først sammen og deretter oppi osteblandingen.
  • Hell vannet av soppen og klem ut så mye som mulig. Finhakk soppen og ha den oppi oste- aubergineblandingen.
  • Smak til med salt og pepper. Smør en ildfast form og utsiden av aubergineskallene. Ha fyllet oppi aubergineskallene og sett inn i ovnen i ca. 40 minutter.
