JULI – det formelig flommer over av deilige grønnsaker og  frukt på denne tiden av året, og aubergine er en av disse grønnsakene. Bruken av aubergine er nok ikke like utbredt som bruken av gulrøtter og blomkål her hjemme, men rundt i verden er den en svært populær grønnsak. Det har blitt meg fortalt at i Tyrkia sa de i gamledager at en ung kvinne ikke var gifteklar før hun kunne 100 måter å tilberede aubergine på. Litt drøyt kanskje, men denne lilla grønnsaken har mange bruksområder. Den kan bakes, kokes, stekes, syltes for å nevne noe. Mange sier at auberginer har en litt kjøttaktig konsistens. Så langt vil jeg ikke dra det, men at denne grønnsaken godt kan spille hovedrollen i en middagsrett og ikke trenger å støtte seg på noe kjøtt kan jeg være helt enig i. Dette er en nydelig vegetarisk rett fra Italia. Her er auberginene fylt med sopp, ost og friske urter. Sammen med en frisk salat er dette en skikkelig velsmakende middagsrett.

Spagetti er jo alltid godt og sammen med silkemyke biter av aubergine, rikelig med parmesan og ansjos er dette rett og slett en fulltreffer.

Melanzane alla parmigiana

Dette er en av de absolutt mest populære oppskriftene mine på bloggen, og en av mine favoritter også. Det er lett å forstå, for komibansjonen fløyelsmyk aubergine, smaksrike tomater og masse deilig smeltet ost kan jo ikke slå feil. Den er ikke laget på 15 minutter, men er absolutt verdt den tiden det tar å lage denne.

Det er ingen vei utenom denne greske feriefavoritten når listen med mine 5 beste oppskrifter med aubergine skal settes opp. Om du velger å lage den med malt okse eller lammekjøtt er opp til deg, og det samme er om du vil ha kanel i eller ei. Godt er det uansett.

Dette er en stor favoritt hjemme hos oss, kanskje især litt senere når årets lam dukker opp i butikken. Men dette er absolutt et skikkelig digg tilbehør til alle sommerens grillretter. Den er silkemyk og mild, men har allikevel nok karakter til å være interessant.

Fun fact

Især i USA og Australia kalles aubergine for eggplant. Det kan jo kanskje være litt vanskelig å forstå hvorfor denne mørkelilla, avlange grønnsaken (som botanisk sett er et bær) har fått dette navnet. Men det finnes faktisk en type auberginer som er mye mindre enn vanlige auberginer, er formet som et egg og er gulhvite. Så det er nok denne varianten som har gitt auberginen sitt navn der. På 1800-tallet ble da også disse kalt «garden egg» eller «vegetable egg»

Det italienske navnet er melanzane og kommer fra det gammelgreske navnet for aubergine. Gammel overtro sier at man kan bli gal av å spise aubergine og det gjorde at aubergine på folkemunne fikk navnet forvanske til mela insana (galt eple).
