Etter en påske med mye god mat kan det være på sin plass med en enkle vegetarmiddag, og denne er akkurat det – en enkel vegetarmiddag. Spagetti med aubergine er kanskje ikke verdens raskeste middagsrett å få istand, men ingredienslisten og fremgangsmåten er enkel nok.

Aubergine er en grønnsak som etter min mening ikke er særlig god dersom den ikke får nok tid i varmen. Da er den hard, bitter og kjedelig i smaken. Etter at den har fått nok varme derimot er den nesten søtlig, innsmigrende og litt kremete i konsistensen. For å trekke ut litt av bitterheten lar jeg også auberginen ligge i litt salt først før jeg skyller og steker den. Etter omtrent 10 minutter i stekepannen har de små auberginebitene fått den ønskede konsistensen. Da er det klart for resten av ingrediensene, og det er ikke lenge før maten står på bordet.

Ingredienser

  • 2 store auberginer
  • 2 ts salt
  • 2 fedd hvitløk
  • 4 ansjosfileter
  • 50 gr revet parmesan
  • olivenolje til steking
  • spagetti til 4 personer
  • 1-2 dl kokevann
  • frisk basilikum eller persille

Fremgangsmåte

  • Vask auberginene og skjær dem i 1x1 cm store terninger.
  • Bland auberginbitene med salt og legg i et dørslag og la det renne av seg i 10-15 minutter.
  • Skyll saltet av auberginen og stek det på middels varme i en slipp-lett stekepanne i 10 minutter til de blir helt myke.
  • Kok spagettien etter anvisningen på pakken.
  • Hakk hvitløk og ansjos fint.
  • Ha hvitløk og ansjos oppi stekepannen sammen med auberginen og fres et par minutter til.
  • Ha spagettien oppi og bland godt
  • Tilsett 1 dl av kokevannet og osten i og la osten smelte ned under omrøring. til det blir en kremete saus. Tilsett evt. mer kokevann om det virker tørt.
  • Dryss over finsnittet basilikum.

Server straks, evt. med mer parmesan. Vel bekomme.
