Pin

Kveite er en fantastisk flott fisk som passer til de store anledningene. Den er også allsidig og kler mange slags tilbehør. Her har den fått følge med oliven, kapers, tomater, hvitløk og ansjos. For meg er dette smaker som bringer tanken til sommer, sol og middelhavet. Så, kveite med middelhavssmaker kan kanskje være en idé å lage dersom det blir litt mye snø, kulde og mørke.

Jeg har tilberedet kveiteskivene i dampovnen, for det å lage kveite i dampovn er en super tilberedningsmetode. Det er lettvint, og du beholder alle de gode smakene inne i fisken.

Ingredienser

  • 1 kg kveite
  • 250 gr cherry tomater
  • 2 squash
  • 2 ansjosfileter
  • 1 stort fedd hvitløk
  • 3 dl kalvefond
  • 1/2 dl god olivenolje
  • ca. 30 italienske oliven
  • 2 ss kapers
  • Mandelpoteter til 4 personer
  • salt og pepper

Fremgangsmåte

  • Legg tomatene i en ildfast form og kvern over salt og pepper og drypp over litt olivenolje. Bak i ovnen på 200 grader i ca. 15 minutter.
  • Kok potetene i lettsaltet vann.
  • Sett dampovnen på 130 grader/100% damp. Legg kveiteskivnene i bakken og dryss over godt med salt. Damp til fisken slipper benet. Mine skiver var ca. 3 cm tykke og det tok 18 minutter.
  • Mens fisken dampes gjøre klar sausen og grønnsakene. Vask squashen og skjær ut kuler om du har et kulejern, hvis ikke lag små terninger på ca. 1.5 x 1.5 cm. Disse kokes i lettsaltet vann i ca. 2 minutter. Hold varme.
  • Finhakk hvitløk og ansjos og fres det i litt olivenolje. Tilsett kalvefond og gi det et kokt oppkok. Pisk inn olivenoljen og tilsett olivenene. Tilsett også evt. sjy som har dannet seg i formen med tomatene.
  • Når fisken er ferdig legges den på 4 tallerkener og så legges saus, tomater og squash rundt. Dryss over litt kapers til slutt.

Tips

Det er mye salt i olivenene, ansjosen og kapersen. Pass derfor på at kalvefonden ikke også er veldig salt. Om du ikke har dampovn, kan du selvsagt dampe fisken i en dampkjele, eller trekke den forsiktig i lettsaltet vann.
